Roasted tomato soup is one of most popular soup recipes cooked by home cooks, There are many versions of roasted tomato soup. In this recipe of roasted tomato soup I added some veggies and quinoa to make it more wholesome and also add some texture. If you are not too hungry this can easily be your meal in a bowl.
Winters are hitting us hard once again and sun is perpetually elusive, need for warming food becomes more than ever in this phase of the year. When I say warming food, according Ayurveda like warm milk , honey, herbal teas , dates, nuts are warming foods best consumed during winters. Other than eating those we love to eat our food piping hot.
In these winter days piping hot immediately conjures up a image of hot and steaming bowl of soup that is good enough to nourish the soul and body alike. And for a lazy bone like me I need to make them quick, spending slogging of in the kitchen is not exactly my thing. Maybe one day I would learn to be patient and spend more time one single dish till then I think I will have to manage like that.
Another advantage of this quick soup /meal recipe is , it helps to use up all those extra one or two pieces of veggies that are left over in your fridge crisper and any cooked grains like rice pasta or may be small bowl of quinoa to add that extra bite.
Quinoa is a wonderful African grain that is rich is fiber and proteins. True that there are many Indian grains which are not expensive and good nutritionally ( I use them extensively too ), but I love quinoa for the nutty texture it lends to any dish, so don’t really mind using it here and there. Quinoa is delicious and also a good gluten-free source of protein, iron, and fiber makes it even more desirable at our home.
Roasted red tomatoes and basil soup form the base of soup and added vegetables and cooked quinoa and topped with olive oil roasted baby tomatoes and a generous glug of extra virgin olive oil.
Other day when I posted Thai Vegetable soup recipe , I mentioned that I cooked minestrone soup too. Later when I was writing this recipe of roasted tomato soup I was really not sure whether to call it minestrone or not , because I used roasted tomatoes, whereas in minestrone it is fresh tomato puree, also Pasta is replaced with quinoa, so I decided to call it roasted tomato soup with veggies and quinoa.
