    Chilli Paneer - Indo Chinese Main Course

    Chilli paneer a popular Asian main course dish from Indian-Chinese cuisine. Crispy-fried paneer and vegetables are cooked in tangy, sweet, spicy sauce in this restaurant style gravy to serve with fried rice and noodles. Try this easy Chilli paneer recipe at home you will never order takeout ever!

    We love spicy food! And let's get real Asian food or spicy Indo Chinese food makes us weak in the knees and get our taste buds activated.

    Another thing we Indians love is Paneer and I think that's what makes Chilli paneer one of most favorite Indo-Chinese vegetarian dinner option.

    This easy to make vegetarian dinner option is loaded with flavours and comes with two options.  You can make this delicious recipe If you love Indian cottage cheese. If you want to make Vegan version make it with Tofu (chilli Tofu) and use this super delicious chilli paneer recipe as it is.

    How to Make Best Chilli Paneer

    You can make The best Chilli paneer which tastes like restaurant or even better if you follow few easy steps. But before talking about recipe there is major decision to make which chilli paneer version you enjoy the most and how to make them.

    Dry Paneer Chilli recipe

    A paneer dish that is served as snack or appetiser. This semi-dry chilli paneer tastes exactly like restaurant style chilli paneer.

    Chilli Paneer with Gravy

    This version of chilli paneer is served as as main course dish to serve with fried rice or stir fried veggie noodles. It has more sauce/gravy.

    Here are my Secret Tips to Make Excellent Chilli Paneer at home.

    • Use Homemade Paneer: A good quality paneer is most crucial in making any paneer dish. And I have a recipe to make soft paneer at home so I prefer to use homemade paneer.
    • If you are feeling lazy and want to use store bought paneer this hack will work great. Soak in lukewarm salted water for 5-6 minutes before using and then drain it nicely. Not only for this dish but in any paneer dish it will taste super soft and melts in mouth.
    • Do not cook over cook vegetables, quickly stir fry so that they retain their crunch. Also avoid over cooking paneer to prevent it becoming chewy.
    • You can make dry version of this. Also you can make same chilli paneer with extra sauce by adjusting the amount of water. 

    Chilli paneer recipe

    Shallow fry, Deep fry or Pan Fried Paneer

    Deep-fried paneer after marination tastes good but my waist doesn’t approve of it all the time. So, I usually opt for shallow frying or pan frying.

    I have pan-fried the paneer to make this recipe. Pan fry the paneer until it is golden brown from all the sides and then proceed with making the gravy.

    Recipe Notes- Paneer Chilli

    • Instead of sugar use tomato ketchup, that helps with managing the sweetness required in paneer chilli.
    • Prep every thing before cooking: You should cook all the stir frying on high heat so I recommend prep everything and keep it close so you can add it immediately and do not end up burning things. 

    • Using black pepper sauce makes difference in taste. Use it instead of black pepper to enhance the taste. 
    • Always add salt after tasting the gravy because all the sauces that we use while making Indian Chinese recipes (like soy sauce, tomato sauce) contain salt.
    • While making the sauce I have used black pepper sauce, you can use black pepper powder as well (as per the availability)
    • To make it vegan substitute paneer with tofu.
    • To make it gluten-free substitute corn flour with rice flour and use gluten-free sauces. 

    Step by Step Recipe

    Cut the paneer into inch squares. Take a medium sized bowl and add paneer in it. After that add salt, 1 teaspoon black pepper powder, and 2-3tbsp of cornflour in it.

    Coat the paneer nicely in the cornflour.

    Heat a pan and add oil in it. When the oil starts to smoke add the paneer pieces one by one and pan fry until golden brown.

    Set it aside and prepare for the gravy.  Heat oil in a pan and when it starts to smoke then add chopped onion and spring onion.

    Mix all the ingredients and saute them on high heat for 2 minutes. 

    When onion is turns light pink in color add chopped green and red capsicum. Saute for another minute.

    Saute the ingredients for 1-2 minute and then add chopped ginger and ginger garlic paste. 

    Mix them well and now add tomato ketchup, soy sauce, red chilli sauce and black pepper sauce in the pan. 

    Now, in a small bowl add 1-2 tablespoons of cornflour and 100 ml of water. Mix it well with a spoon and pour it in the pan. Add salt to taste and black pepper powder in it. 

    Cook all the ingredients until the gravy starts to thicken and its colour darkens.

    When the gravy is thick (according to your taste) then slowly add the pan-fried paneer in them.

    Mix the paneer in the gravy and cook for another 1-2 minute.

    Sprinkle some spring onions on top and your Paneer Chilli is ready to devour.

    Ingredients

    (For pan Frying )

    • 300 gms Paneer
    • 1 teaspoon Black Pepper Powder
    • 3 tablespoon Corn Starch
    • 2 tablespoon Oil
    • ¼ teaspoon Salt

    (For Gravy)

    • 3-4 tablespoon Oil
    • 1 teaspoon Garlic optional
    • 1 inch Ginger chopped
    • 8 Green Chilies slit
    • 5 Spring Onion
    • 1 Green Capsicum
    • 1 Red Capsicum
    • ¼ cup Spring Onions Green
    • 1-2 tablespoon Tomato Ketchup
    • 2 tablespoon Soy Sauce
    • 1 tablespoon Red Chilli Sauce
    • 2 tablespoon Cornflour
    • 100 ml Water
    • ½ teaspoon Salt to taste
    • ¼ black pepper

    Instructions

    (Prepare Paneer For Chilli Paneer)

    • Before we pan fry the paneer we will coat it in corn-starch and other spices. Take paneer and cut them into small square pieces.
    • Take a medium sized bowl and add paneer in it. After that add salt, 1 teaspoon black pepper powder, and 2-3tbsp of cornflour in it.
    • Coat the paneer nicely in the cornflour.
    • Heat a pan and add oil in it. When the oil starts to smoke add the paneer pieces one by one and pan fry them until golden brown. Pan fry the paneer from all the sides until they are in a beautiful golden brown color.
    • Set it aside and prepare for the gravy.

    (For Chili Paneer Gravy)

    • Saute the ingredients for 1-2 minute and then add chopped ginger and ginger garlic paste. 
    • Mix them well and now add tomato ketchup, soy sauce, red chilli sauce and black pepper sauce in the pan. 
    • Now, in a small bowl add 1-2 tablespoons of cornflour and 100 ml of water. Mix it well with a spoon and pour it in the pan. Add salt to taste and black pepper powder in it. 
    • Cook all the ingredients until the gravy starts to thicken and its colour darkens.
    • When the gravy is thick (according to your taste) then slowly add the pan-fried paneer in them.
    • Mix the paneer in the gravy and cook for another 1-2 minute.
    • Sprinkle some spring onions on top and your Paneer Chilli is ready to devour. 
    • Serve it with schezwan rice, fried rice or stir-fried noodles and enjoy hot.

    These lentil patties that I have used for making chaat are eggless, gluten-free healthy, easy to make, and delicious! You can serve them as cutlets, patties or make a chaat like I am showing you in this recipe. 

    Red lentil tikki is much healthier than regular potato tikki. If you fry it in Air fryer like I do most of the times it's a much healthier way to enjoy chaat. 

    Lentils are low in glycemic index and high in proteins and fiber. These are one of the best vegetarian and vegan option for Low GI food which makes it a great for diabetics. Lentil and paneer both a good source of vegetarian proteins. So you can enjoy this healthier Chaat guilt free.

    So these masoor dal tikkis are: 

    • Gluten-free
    • Vegetarian
    • Air fried 
    • Healthier

    For making this tikki chaat, lentil patty is topped with green chutney and sweet tamarind chutney. And then a generous leashing of seasoned curd topped with crunchy sev and other seasonings make it even more delicious.

    So coming back to our Dal and Paneer Tikki, this one is my take on India's favorite chaat, specially to brighten your Diwali party in association with 24 Mantra Organics. Yes! It's that time of week (Thursday) when I bring to you my special recipe made with Organic Ingredients.

    How to Make Masoor Dal Tikki / Red lentil Cutlet

    Ingredients You need

    Masoor dal in english is known as red lentils and both are one and same thing. For making the lentil patty I have used whole red lentils.

    Paneer : You can easily substitute paneer with tofu. 

    Peanut Oil - To brush while Air-frying.

    Spices and Seasonings - Salt to taste, Red chilli powder, chaat masala powder

    Fresh: Coconut, green chilli, ginger

    Garnishes and Toppings- Green chutney, Tamarind and date chutney, Yogurt (whipped), Sev (crispy spicy vermicelli), Roasted cumin powder

    How to Make these lentil tikkis

    It starts with washing and soaking red lentils for 3-4 hours. Next I drain out the water and grind lentils with 3-4 tablespoons of water to make a thick paste.

    Transfer the lentil paste in to a bigger bowl and add grated paneer, chopped coriander, grated ginger, red chilli powder, salt, green chillies and mix them well. 

    Divide the prepared dough into 12 portions and shape them like a patty with palms of your hands.

    Now there are two method to cook from here. You can make these in Air fryer or Deep fry as per your preference. 

    Deep-Fried Lentil and Paneer Tikki

    To deep  fry the lentil patties heat oil till it is slightly smoky. Carefully drop the patties in batch of 2-3 and deep fry till golden brown and crisp from both the sides.

    Drain on to absorbent kitchen paper. Repeat the same for remaining patties and prepare the rest of the patties.
     

    Air- Fried Masoor Dal Tikki

    First pre-heat the air fryer at 200C for 5 minutes.

    To make air fried cutlets I apply a generous amount of peanut oil on both the sides of the patty and place them in a single layer on wire mesh basket of the air fryer. 

    Next turn on the air fryer at 200c for 7 minutes. Flip them once to cook another side and air fry for another 6-7 minutes on 190c.

    At this stage you can serve these lentil patties as lentil cutlet for your evening teatime snack. 

    To serve them as chaat follow the below mentioned process:

    To assemble Masoor Dal and Paneer Tikki Chaat

    • Whisk the dahi or curd with few pinch of salt.
    • Take about ¼th cup of curd / yogurt in a bowl. Place 2 pieces of tikki in the plate, top it with green chutney and sweet tamarind chutney.
    • Sprinkle red chilli powder, chat masala and some green coriander leaves and enjoy the tangy and spicy Masoor Dal and Paneer Tikki Chaat.

    Crispy Tangy and spicy Tikki Chaat recipe, with a delicious and healthy twist. Popular Indian tikki chaat recipe made with Tikki of masoor dal and paneer.

    Ingredients

    • 200 g Organic Whole Masoor dal
    • 100 g paneer
    • 100 g boiled and mashed potato optional
    • 60 g bread crumb
    • Salt to taste
    • 1 teaspoon Red chilli powder
    • 3 tablespoon coriander leaves
    • 1 tablespoon grated ginger
    • Organic Peanut Oil for Deep frying

    For Serving

    • ¼ cup green coriander chutney
    • ¼ cup sweet tamarind chutney
    • 300 ml yogurt whisked
    • ½ teaspoon rock salt
    • 2 tablespoon coriander leaves finely chopped
    • 1 teaspoon chaat masala
    • 1 teaspoon red chili powder
    • 2-3 tablespoon sev

    Instructions

    • Wash and soak masoor dal in water for 4-5 hour.
    • Drain the water and grind the dal along to a fine paste.
    • Transfer the paste into the bowl, add grated paneer, mashed potatoes, bread crumb along with salt chopped coriander, red chilli powder grated ginger and combine well.
    • Heat up enough peanut oil (about 300ml ) in a wok or kadahi for deep frying.
    • Divide the prepared dough into 12 portions and shape them like a patty with palms of your hands.
    • Once the oil is hot and slightly smoky, carefully drop the patties in batches of 2-3 and deep fry till golden brown and crisp.
    • Drain on to absorbent kitchen paper. Repeat the same for remaining patties and prepare the rest of the tikkis.

    Delicious Paneer biryani is a mildly spiced layered biryani cooked in Hyderabadi dum style. An aromatic biryani recipe for vegetarians made with fragrant basmati rice, soft and creamy paneer and aromatic herbs and spices.

    It's a Perfect one pot Indian meal for lunch or dinner. If you love paneer this is one of best paneer recipe.

    A  complete meal by itself this veg biryani cooked with paneer is flavourful crowd pleaser dish. Be it a party or a regular family dinner, biryani is loved by most people.

    This Paneer biryani recipe is super easy to make. It requires a little time and patience but taste is really totally worth of both!

    A tasty biryani recipe begins with caramalised onions known as Birista. Layers of delicious vegetable base, onions and aromatic long grain basmati rice is cooked to a delicious perfection. Aroma of whole spices infused in  basmati rice is totally divine. 

    How to Make Paneer Biryani Dum Style

    I usually make the Paneer biryani in Hyderabadi dum style. In dum cooking basmati rice is partially cooked and then layered with marinated paneer and herbs. Everything is then slow cooked and it flavours are infused resulting in a very aromatic biryani.

    This method of using marinating paneer with different spices is used in Hyderabadi Paneer biryani Recipe which is served in Indian restaurants.

    Each grain of rice remains separated and fluffy mainly because of the cooking technique. There are a few simple tips that can help you to make a perfect biryani.

    Ingredients for Paneer Biryani

    Dairy: yogurt /curd, Paneer (Indian cottage cheese) , milk

    Fresh: Ginger , Onion, tomato, coriander/cilantro, Mint

    Dry: basmati rice long grain, Crispy fried brown onions, walnuts, cashew and almonds (optional)

    Fats: Ghee/clarified butter, Oil

    Spices and Seasonings: Salt, red chili powder, turmeric powder, biryani Masala or garam masala, cumin seeds, bay leaves, Star anise, Peppercorns, cinnamon stick, cardamom, green cardamom, cloves, saffron strands.

    (For making Authentic biryani recipe these all spices are used plus some more. However do not fear I am adding substitution in recipe notes section)

    Paneer Biryani Cooking Steps 

    Rinse basmati rice water till the starch clears from the water. and water runs clear. Then soak the rice for 15 minutes in the water. Keep them aside.

    Soak 10 threads of saffron in 2 tablespoon of warm milk and keep that aside.

    Paneer Biryani Step by step pictures

    In a pan boil water and add drained soaked basmati rice with whole spices bay-leaf, cinnamon, black cardamom, cloves, and salt. Cook the rice till it is 70%  cooked. Drain the water and keep the rice aside. [photo 1,2]

    Keep the rice aside.

    Heat ghee in a pan and toss cashew, walnuts, almonds. Roast them in ghee for a minute and take them out in a bowl. [photo 3,4]

    In the same pan add cumin seeds, peppercorns, grated ginger, and stir it for a minute. Add onion and saute the onions. Add green chilies and saute the onion for a minute or two. Then add tomatoes, and mix well. [photo 5,6]

    Then sprinkle salt to taste, red chili powder, turmeric powder, biryani masala, coriander powder. [photo 1,2]

    Cover and cook the tomatoes until they are soft and pulpy. [photo 3]

    Add yogurt in the ingredients and mix well. Pour water and cook the gravy. [photo 4]

    Add the paneer pieces and coat it well with the other ingredients.[photo 5]

    Cook for a minute and take out some of the paneer and vegetable masala from the pan and keep aside. [photo 6]

    Easy biryani recipe step by step

    Now make Layers for Paneer biryani. First add a layer of partially cooked rice over paneer masala.[photo 1]

    Make another layer with remaining cooked paneer and vegetable mixture.[photo 2]

    Then add fried onions. Add another of partially cooked rice, pour saffron-milk, coriander leaves, mint leaves and remaining fried onions on it. 

    Cover and cook for a 10-15 minutes on slowest heat. Top with fried nuts fluff the biryani with a fork or spoon and enjoy!

    Recipe Notes and Tips for Making Perfect Paneer Biryani

    • While cooking rice boil the rice with whole spices to get better taste and aroma. Never boil the rice without spices.
    • Marination time is another factor that affects the flavour of biryani. Always marinate the paneer well and for a longer duration for a better flavour.
    • Do not overcook the rice in pre-cooking stage 60-70% cooked rice is good for biryani.
    • When in doubt always undercook because you will still get a chance to perfectly cook it during the dum process.
    • Fried onion or birista is another step which should never be skipped for biryani.
    • If you can't find any spice, look for it on either amazon or local Indian grocery store.
    • If you still can't find any particular spice, skip it but make sure to use as many as you can easily find. 
    • Biryani masala or garam masala either or both is a MUST for best tasting Authentic biryani. 

    Best Rice for Biryani

    If there is one question that I am asked very often is, Which is best basmati rice for Biryani? I would say any long grain basmati rice is good for biryani.

    You can try 2-3 good brands and see in which rice remain fluffy, separated and fragrant.  Other than the good quality basmati rice, How you cook rice for biryani is also important. I have also done a video of How to cook rice for Biryani.

    What to Serve with Biryani?

    Serve the paneer biryani hot or warm with raita or plain yogurt. You can serve it with boondi raita, cucumber raita, or beetroot raita.

    Equipment

    • Any Deep Pan or Dutch oven

    Ingredients

    • 200 grams paneer
    • 200 grams basmati rice long grain
    • 3 Tbsp yogurt curd
    • 1 teaspoon ginger grated
    • 2 tablespoon milk
    • 2 Tbsp Ghee
    • 1 tablespoon Oil

    Spice Powders

    • 1 teaspoon biryani Masala
    • 1 teaspoon turmeric powder
    • 1 teaspoon red chili powder
    • Salt to taste

    Whole Spices for Biryani

    • 1 teaspoon cumin seeds
    • 1-2 Star anise
    • 2 bay leaves
    • 7-8 Peppercorns
    • 1 inch cinnamon stick
    • 2 cardamom
    • 1 green cardamom
    • 4 cloves
    • Salt to taste
    • 1 teaspoon red chili powder
    • 1 teaspoon turmeric powder
    • 10 saffron strands
    • garam masala powder

    Fresh Ingredients for Biryani

    • 3 Onion sliced
    • 1 tomato chopped
    • 2 Tbsp pudina mint
    • 4 tablespoon coriander leaves chopped

    Instructions

    Preparation for Making Biryani

    • warm the milk and add saffron strands in the milk for soaking.
    • Add paneer cut into small cubes and keep them aside.
    • Wash and rinse basmati rice till water runs clear. Soak rice for 15 minutes.

    Cooking Rice for Biryani

    • In a big pot of boiling water add bay leaf, big cardamom, green cardamom and salt.
    • Add washed and soaked basmati rice and cook till the rice are 60-70% done.
    • Drain out the water using a colander and keep these partially cooked rice aside.
    • Heat oil in a pan and add one sliced onion to it. Cook the onions till it becomes crisp and dark brown. Keep them aside. If you are using store bought crispy fried onions skip this step.
    • For making biryani, in the same pan heat 2 tablespoon ghee and fry buts if you are using them. Take them out after 1 minute and keep them aside.
    • In the same pan add whole spices, cumin, 1-2 star anise, 1-inch cinnamon stick, 2 Cardamom, 3-4 cloves, peppercorn and cook for 1 minute on slow heat till spices are fragrant.
    • Add sliced onion and cook for another 2 minutes.
    • Now, add grated ginger fry it and add tomatoes and then add salt, red chili powder, garam masala powder or biryani masala or both in ½ quantities, and mix well. Cook till tomatoes are mushy.
    • Add ⅓ cup of water and mix well. cook for 3-4 minutes on medium heat.
    • Add paneer in this cooked masala and switch off the heat. Take out half of the paneer with cooked masala gravy.
    • Let the remaining half of paneer masala in same pan

    Assembling and Layering of Paneer Biryani for Dum Cooking

    • In the same pan, spread half of the cooked rice over masala layer.
    • Now for next layer add remaining other half of the paneer masala gravy which you took out earlier
    • Sprinkle green coriander and mint leaves over this and lightly fried onion.
    • Follow it up with the second layer of partially cooked rice.
    • Finally, add warm milk in which saffron is soaked and tightly cover it. Also add mint leaves, fried onions and cover with a heavy lid.
    • Cook it on lowest heat for 15 minutes and serve paneer biryani hot with raita
