We all need good sandwiches often, at least in my family we all do. As a kid sunny boy always wanted some sort of sandwich in his school lunch box, no paratha, noodles or usual suspects in Indian tiffin box. All I was allowed was some sort of pasta or sandwiches for the lunch box (huh …talk about the variety in the food ). But as they say, you can win from everyone, except your own kids.
Till date, he has an almost fixed menu for his office lunch box, though my scope of including more variety in terms of dishes has increased. I can now pack salads, yogurts and more variety of grains. But Chapati, Indian curries, and such things are still a no-no. A sandwich is his forever love out of all, and let me tell you he can make a sandwich out of anything edible and open for trying out various sandwich fillings… which at least is a great relief. So, I try to play with various ingredients, bread, and fillings etc.
But this post is not about his favorites, in this post, I am sharing one of my favorite sandwich with almost Indian style filling except cream cheese. This again draws inspiration from one of my Mom’s Curd sandwich recipe which she made with using chakka (Greek yogurt) chopped veggies and one of her secret ingredients (which I later came to know was malai) with Indian spices and toast it with homemade unsalted white butter on Tawa. It was straight up heaven on your plate.
I made few changes here and there and changed the seasonings a bit and came up with my version of Curd cheese and veggie sandwich which I serve as teatime sandwiches. You can serve it for breakfast or high tea and I can guarantee that this sandwiches tray would be the first one which you would be refilling 🙂
