Dal fry is a popular Punjabi dal recipe. it is made with toor dal /arhar dal or split pigeon peas. A special tempering is added towards the end of cooking that is why it is known as dal fry. The fry or tadka gives it a characteristic taste as well as the name of dal fry or Punjabi dal tadka.
Every home has some of their special recipes, and dal fry also is one of those signatures in each home in India and generally Indian subcontinent. Texture, consistency, spiciness, masalas, ghee, oil, there are so many things that make this simple humble dal fry a special dish in itself.
Homestyle dal fry differs from dhaba style dal fry recipe mainly in terms of spiciness it has and also the amount of fat/ghee used.
Dal fry is usually served with Roti or Tandoori nan, but sometimes I like to serve it with rice which makes a comfort meal too. Dal fry and red rice make a perfect meal combination which is nutritious and tasty.

- 1 cup of toor dal/arhar dal /Split pegion peas
- 1 tsp of salt
- 1/2 tsp of turmeric
- 2 tbsp ghee
- 1 tsp of cumin seeds
- 2 tsp of chopped ginger
- 2-3 green chillies
- 1 finely chopped onions
- 1 chopped tomato
- 1 tsp of red chilli powder
- 1 tsp of coriander powder
- 2 tbsp coriander leaves
- 2 dried red chillies
- 1 tsp of garam masala
Wash toor dal or arhar dal till water runs clear.
Now in a pressure cooker, cook the dal in 500ml of water along with salt, red chilli powder, turmeric powder and a pinch of heeng/asafoetida.
Cook the dal for 2 whistles or total 15 minutes.
Meanwhile when dal is cooking you can prepare a tempering for that.
For making tempering or tadka, add 2 tbsp ghee in a pan and 2 tbsp of ghee.
when ghee is heated, add cumin seeds and chopped ginger.
when cumin starts to pop up add 1 green chilli broken into two pieces and whole dried red chillies.
Fry them on slow heat for about 1/2 a minute and add finely chopped onion.
Cook the onion till light pink for 2-3 minutes on medium heat and add tomatoes, green chillies and cook for 4-5 minutes till tomatoes are pulpy.
Add garam masala powder and mix the tadka very well.
If you like dal very spicy add 1 more green chilli here and some coriander leaves too.
Tadka for dal is ready and now add this tadka to the pressure cooked dal and mix well.
Switch on the heat and cook everything together without covering it for 3-4 minutes and keep it stirring.
After that switch off the heat and serve the hot dal in a serving bowl, top it with some more fresh coriander leaves and , dal fry is ready to enjoy.
