stepwise savoury waffles recipe Indian

Mix together cabbage, leftover idli batter, green chillies, salt.

Combine everything and make thick batter

Also add grated zucchini and chopped coriander/cilantro leaves.

Heat waffle press and spray with olive oil.

Pour batter in the cavity of waffle press

Cover and cook for 3-4 minutes

Hint: For quick turnout of waffles make sure to preheat the waffle press for 2-3 minutes before pouring batter for the first batch. This step will also ensure that waffles do not stick to press and come out easily. In this recipe I have used this Lifeline waffle maker.

Substitutions

Since I am sharing the recipe for using leftover idli batter. The base remains same but you can use vegetables as per your choice.

  • Purple cabbage – instead of purple cabbage, you can use regular green cabbage or spinach.
  • Peas – I have not added peas you can add shelled and boiled peas.
  • Onions– Chopped onions or capsicum can be added.
  • Zucchini– You can substitute grated zucchini with grated bottle gourd

Creative Variations

  • Cheesy Waffles: Add grated cheese like cheddar or mozzarella to the batter for a cheesy, savory flavor.
  • Spiced Up: Enhance the batter with Indian spices like cumin, turmeric, or garam masala for an extra kick.
  • Protein Boost: Mix in crumbled paneer, tofu, or boiled chickpeas to make the waffles protein-packed.
  • Nutty Touch: Add crushed peanuts or sesame seeds for added crunch and flavor.
  • Vegan-Friendly: Replace the idli/dosa batter with a chickpea flour-based batter for a vegan alternative.

Tips To Make Best Savory Waffles

  • Batter Consistency
Keep the batter thick but pourable. Adjust with a small amount of water or flour if needed to prevent it from being too runny or dense.
  • Preheat and Grease
Always preheat the waffle maker and use oil spray to ensure the waffles cook evenly and don’t stick to the plates.
  • Even Vegetable Distribution
Mix the batter thoroughly so vegetables like cabbage and zucchini are evenly distributed for consistent texture and flavor.
  • Serve Fresh
Savory waffles are best enjoyed hot and crispy right after cooking. If storing, reheat in an air fryer or toaster to revive the crispiness.

How to Serve

  • Use as a base for an open sandwich by topping with sautéed vegetables and grated cheese.
  • Pair with coconut chutney, mint-coriander chutney, or spicy tomato sauce.
  • Serve as a snack with masala chai or coffee for a delightful teatime treat.
  • Top with a dollop of yogurt and sprinkle of sev for a chaat-inspired twist.

Equipment

A good waffle maker is a must for making crispy and fluffy waffles. You can use an electric waffle maker or a cast iron non electric one. I have used this Lifeline waffle maker in making this recipe.

Storage

I usually make them fresh because recipe hardly takes any time. I usually have chopped grated veggies in my fridge it’s only a matter of few minutes. However in case you want to make them ahead of time or have leftovers you can store these waffles in the fridge for 2 days or in the freezer for 3-4 weeks.

To reheat just thaw them in the fridge and pop them in a pre-heated Air fryer at 180c for 3-4 minutes.
