Shakshouka or Chakchouka can be described as egg casserole which is poached eggs in tomato sauce. Shakshouka can be a great breakfast or brunch even a dinner recipe if you love egg recipes like me.
Shakshouka is said to be originated in Tunisia, but broadly speaking it is mostly cooked in all middle eastern countries along with some parts of Africa with a little bit of variation here and there. Shakshouka in Arabic means all mixed up, and in the true sense it is a delicious mix of tastes, textures, flavours and health and that makes it must make egg recipe in your recipe repertoire.
Shakshouka is one of those dishes which can be served in any meal, breakfast, brunch, lunch or dinner. Runny eggs poached in tangy tomatoes and bell pepper sauce, scooped up with a crusty bread, each bite is burst of flavours in your mouth.
As the winter season is approaching, brunching on our small but sunny terrace is what I look forward to. Though this is not exactly the season to bask in the sun, but with awning above to save us from the heat of the sun and perfect temperature this what we enjoyed in yesterday’s brunch.
A skillet of shakshouka along with crusty sourdough bread and a good supply of fresh orange and carrot juice which is a must during the season with our favorite exotic jams from ITC’s Kitchen’s Of India range.
Tomatoes are an excellent source of antioxidants, Vitamin C and beta carotene, Lycopene a carotenoid is one of prominent antioxidant. All of these are well known for cardiovascular benefits and anti-cancer properties. But lycopene mostly remains unabsorbed by the body in its raw form, but when you cook tomatoes with olive oil the bioavailability of lycopene increases to a great extent, and our body absorbs it more readily.
