    Homemade Thai Green Curry Paste Recipe from Scratch - Vegetarian

    Homemade vegetarian Thai green curry paste to make Thai veg green curry. Usually, Thai green curry paste comes with fish sauce as an ingredient, but this homemade Thai green curry paste is completely suitable for vegetarian and vegan lifestyles. 

    The secret of making fragrant homemade Thai green curry paste is also the same use freshest ingredients as far as possible. In this recipe, I have used easily available ingredients/substitutions in India.

    In my kitchen, I try to use homemade masala blends and cooking pastes as much as possible, no matter whether I am the one who is cooking or the cook who usually comes once a day to help with the basic preps etc.

    Being a working household where each one of us has to start the work in the morning having a person to help is a blessing so that we can eat a fresh meal in the meal times. These fresh home curry pastes, chutneys, masala makes a lot of difference so I try to make them once a week and freeze them so that these are available for cooking anything during the week. And Yes that means planning your week's menu in advance.

    If you are like me who love home-cooked fresh meals all week but find yourself stuck because hard-pressed for time.     Any cooking paste, use of the freshest possible ingredients matters a lot, that's the reason that I try to have fresh herb plant in my balcony garden and pluck them fresh. And the ones that need to be purchased also come fresh as far as possible.

    Coming back to green Thai curry paste this is super flavourful, fragrant and no fail Thai green curry paste when you want to make Thai curry from scratch. For making red Thai Green curry paste just replace green chilli with red chilli and add red wine vinegar.

    Ingredients

    • 4 green chillies
    • 2 - 3 shallots
    • 20 g thai galangal Fresh
    • 2 cloves garlic , crushed
    • 40 g coriander leaves fresh with stalks
    • 2 lemongrass stalks
    • ½ lime , grated zest and juice
    • 3 kaffir lime leaves
    • 1 teaspoon coriander seed powder
    • 1 teaspoon black pepper powder
    • 1 teaspoon soy sauce light
    • 2 tbsps peanut oil
    • 1 teaspoon sugar

    Instructions

    • Prepare and wash all the ingredients. Roughly chop them and add all of the ingredients in a food processor.
    • In the grinder jar blitz to a coarse paste.
    • You can use it fresh which is very fragrant or you can refrigerate it for upto 2-3 weeks in the freezer if you are making some extra or planning to use it later.

    Notes

    NOTES
    1. If you don't eat garlic you can skip that and still make thai green curry paste.
    2. If you are using paste straight away you can skip adding oilve oil, soy sauce in the curry paste and add the oil directly when you are cooking curry.
