The First thing that comes to your mind when you hear word salad is ‘healthy’ which is mostly true , but some salads can be really overloaded with calories and derail you from your healthy eating path very easily.
Any salad can become healthy or unhealthy depending on the ingredients you use to build up a salad. Add calorie rich dressings, fried toppings like croutons/potatoes or extra cheese and you can easily take word healthy out of your salad. With some planning and little extra care, your salad can be a very healthy balanced meal in itself, healthy or unhealthy? The choice lies with you.

Veggies and greens
Ideally, vegetables and leafy greens make the best base for any salad. You can have one or as many as you like. There are many options fresh green leaves like Lettuce, iceberg, baby spinach or bitter greens like rocket/arugula, deadline greens etc according to other ingredients you plan on using.
Why just leaves you can add some bite-sized pieces of Raw veggies like cucumber, tomatoes, baby tomatoes, kohlrabi or fennel bulbs. You can use some cooked and sliced veggies like beetroots and carrots too.
Want to become more adventurous, grilled eggplants, squash, carrots, beets to add smokiness to the salad. Have you ever tried using pickled vegetables like cucumbers, baby onions, carrots in the salad? These taste awesome! DO give them a try if you have not till now.
Dressing can make or break any salad, taste wise as well as health wise. From basic vinaigrette to creamy rich dressings you can pick anything depending on the flavour profile you want to pick.
The vinaigrette is basically a combination of one fat and one acid, most popular one is olive oil and lemon. You can experiment with your vinaigrette add some juices, vinegar, cider or even wine.
Or you can choose from creamy, mayonnaise-based ranch or buttermilk dressings for hearty and robust salads, but these are not the healthy ones.
A salad should have various textures for a good mouthfeel. Crunchy ingredients like pumpkin seeds, flax seeds, sunflower seeds or some toasted nuts add a good amount of crunch in any salad. If you love bread, adding few baked croutons to your salad is a great idea.
Think beyond Apples or strawberries, avocado, oranges, grilled peach and why only fresh fruits you can go completely crazy and use dried fruits like raisins, cranberries or dehydrated fruit chips.
Make a meal out of your salad with the addition of roasted/grilled chicken, Hard boiled eggs, chunks of any soft cheese like cheddar, paneer, Tofu, Feta etc or grated hard cheese to add to the sharpness in the salad. Another thing that makes the salad even better is some carbs in the form of grains. Grains add a bite to it. Cooked grains like millets, wheat berries, barley or quinoa is small quantity add a lot of fun to the salad and completes it as a meal.
Salads are the fun meal to eat, you can mix and match from the above components or use all of the above components. These are few of my ideas on how to build a better salad. But really there are no rules, after all, it’s your salad, so you choose what goes in it.
