    Everyone has got their own favourite egg salad recipe. Some like it in its classic egg salad, loaded with mayonnaise plus all the works. For some, it’s cheese or yogurt that makes their egg salad the best egg salad recipe in the world. And, some of us have a secret dressing to make their best egg salad recipe.     At our home, we generally like to have classic and ethnic food, but if it is too unhealthy then I try to makeover the recipe in such a way that it retains its classic character and nourish my family without compromise on taste or healthy factor. One such recipe is this egg salad recipe.

    Okay first tell me who is in love with mayonnaise loaded egg salad? I see most hands up! I know we all love that stuff. But what we don't love is the fact too much mayonnaise is not good for us. So we keep finding ways to skip mayonnaise in egg salad.

    This Lite Egg Salad recipe is a healthy makeover which tastes as good and as creamy as the regular egg salad recipe, but without going overboard with the use of mayonnaise.

    Even the small quantity of mayonnaise I used is homemade olive oil mayo, instead of a regular one. Olive oil is one of the heart-healthy fats; so little less guilt, I guess :).

    Many egg salad recipes rely on too many ingredients, but as I always say we love simple, uncomplicated flavours of fewer ingredients in any dish. So I just add a small quantity of mayonnaise plus yogurt. yogurt in egg salad? trust me to try it once it adds a delicious tangy taste and saves tonnes of calories.  Celery in the salad adds a fresh crunch and some lemon to perk up the things a little more.

    You can serve this delicious egg recipe for breakfast or dinner as it is or you can make egg salad sandwich the choice is yours. Another simple but very comforting recipe you can try is this Indian Potato salad with egg.

    Also, pay attention to how to boil the eggs perfectly so the yolk is still moist and not dry, not runny, but just moist. Also, take care that there are no grey ring around egg yolk after boiling. Every good recipe of egg salad relies on perfectly boiled eggs more than any fancy ingredient so I can't stress enough to start right with boiling the eggs perfectly.

    Ingredients

    • 4 Eggs Whole large
    • .25 cups celery
    • 1 tablespoon Olive Oil mayonnaise (reduced fat )
    • 2 tablespoon yogurt
    • .5 teaspoon olive oil
    • 1 tablespoon lemon juice
    • .5 tablespoon sea salt
    • ¼ teaspoon black pepper

    Instructions

    • Place all the eggs in cold water over medium-high heat. Cook for 15 minutes.
    • Peel shells and chop these boiled eggs into 8 pieces each.
    • Mix in mayonnaise, yogurt, olive oil and lemon juice in a bowl whisk it and keep the dressing aside.
    • Place chopped eggs and celery in a serving bowl and drizzle the desired amount of dressing over eggs. Season it with sea salt, pepper and serve the egg salad.
