Kanda poha is a popular dish from Maharashtra which is served as a breakfast or snack. For making kanda poha or Kande pohe, beaten rice (known as poha in Hindi) is cooked with a tadka/tempering of onion green chillies and mustard seeds and other spices. It is a simple Indian breakfast recipe but so hearty and flavourful.
Other than Maharashtra Indori Pohe Jalebi breakfast is also quite popular. But poha is cooked slightly differently in Indori Poha. Kanda poha tastes best with hot masala chai . I have always been a fan of tomato poha or vegetable poha which is made using tomato tadka as a base. But once during a work trip to Mumbai I tried this piping hot poha on a shoot set which was served with lots of green chilli lime juice and roasted peanuts. I was hooked and mostly cook Kanda poha at home now.
Just like any type of poha recipe the taste and loo of poha depends on the type of poha you use for cooking Kanda poha. There are mainly three types of poha available on the basis of thickness. Thin, thick poha which is almost like rice and medium thick poha which I feel us ideal for making any type of poha.
A well made plate of kanda poha should ideally be fluffy with each grain separate, I personally don’t like the clumpy or very hard. Spice-wise you can choose your own perfect spice level and choose to add more or less chilli and balance it with very small amount of sugar and lemon juice. The perfect balance of these three gives a kanda poha a perfect taste.
Tips of Making Kanda Poha Tasty
- Choose right and of poha, ideally medium thickness of beaten rice is perfect for making poha.
- Rather than soaking it in water just wash the poha in a strainer/sieve and keep it for few minutes before cooking. This way when you start cooking you will get the perfect texture of fluffy kanda poha.
- You can always add boiled and fried potatoes to make kanda batata poha.
- Try and work out a perfect balance of this trio Chillies, lemon juice and sugar. Thats the key to perfect taste of kanda poha. You can work out on your personal favourite.
