    Malai Broccoli tikka is a delicious and easy to make appetiser recipe. Broccoli coated with malai tikka marinade with spices is roasted in an air fryer to make a perfect tandoori roasted malai broccoli with crispy charred edges.

    If you are looking to make delicious appetiser for your guests and are bored of regular paneer tikka or chicken tikka, this roasted broccoli is a perfect option. This is one of those broccoli recipes that will make you go for seconds.

    You can serve it as it is or further amp it up with a drizzle of cheese sauce. I try to avoid extras so I skip the sauce part and keep it towards the healthier side. But you can do what you want for more deliciousness.

    Why We Love Malai Broccoli 

    1. It is easy to make an appetiser and does not take much time.
    2. It is flavoured nicely with spices so no more bland broccoli dishes.
    3. You can enjoy it even when on a low carb diet.
    4. This is gluten-free and in the recipe notes section of this post, I am sharing how to make it vegan and dairy-free.
    5. You can make it in the oven if you do not want to use an air fryer. 

    If you have a love-hate relationship with broccoli try this malai broccoli recipe made in the Air Fryer. Malai Broccoli is crispy outside and soft melt in the mouth inside when you make it in Air fryer. It's super convenient, smokey and tastes absolutely incredible. So let’s see how to make it.

    Ingredients for Malai Broccoli

    Broccoli: Cut broccoli into florets

    Yogurt: Take yogurt and strain it through a muslin cloth placed on a sieve to make thick hung yogurt. If you do not have that much patience you can use greek yogurt.

    Heavy cream: You can use either store-bought heavy cream or use malai from milk. 

    Cashew paste: You can use readymade cashew paste. Or, make your own cashew paste by soaking cashew in water for a couple of hours and grinding to a smooth paste. 

    Spices & Seasonings: white pepper powder, black pepper, garam masala, cardamom powder, cumin powder, coriander powder.

    Extra virgin Olive oil: You can either use this or mustard oil as per your preference.

    Taste & Flavours: Ginger garlic paste, lime juice, salt, sugar powder.

    Method

    1. Cut broccoli into medium size florets and keep it aside. 
    2. In a mixing bowl add room temperature thick yogurt, cream and cashew paste and lime juice.
    3. I am also adding in 2 teaspoons of ginger garlic paste, lime juice, white pepper, black pepper, cardamom powder, coriander powder, cumin powder, sugar, salt, garam masala and a tablespoon of olive oil. 
    4. Using a small whisk Mix everything well until it is well combined.
    5. Add the broccoli florets into the bowl. Toss these florets until they are all coated well with the marinade.
    6. Cover the bowl and keep it aside.
    7. Preheat the air fryer to 180C for 3 minutes. Arrange the florets on the basket in a single layer. 
    8. Now Air fry at 180 degrees C for 7-8 minutes.
    9. Since broccoli cooks pretty quickly, After 7-8 minutes tandoori malai broccoli is done and ready to serve.
    10. Serve it either with chilli sauce, green sauce or any other favourite sauce of yours ad enjoy!

    Recipe Notes: Tips and Substitutions of ingredients

    Use the fresh broccoli because that packs a lot of flavours. It is more tender which makes it melt in the mouth.

    To Make Vegan Malai Broccoli:

    To make malai broccoli vegan and dairy-free skip heavy cream and use coconut cream instead. If you do not want coconut flavour to add 2 tablespoon extra cashew paste and skip heavy cream. 

    Also, substitute Greek yogurt or regular yogurt with dairy-free yogurt. You can use cashew yogurt or almond milk yogurt.

    Serving Suggestions

    This tandoori roasted malai broccoli is delicious to serve as an appetiser. Serve it with your favourite sauce, chutney or dip. You can use this as broccoli tikka to make a wrap with the usual accompaniment. I sometimes enjoy this tandoori broccoli over a simple and flavourful mixed vegetable pulao.

    • 500 grams broccoli
    • ½ cup yogurt strained thick yogurt
    • 2 tablespoons heavy cream
    • 2 tablespoon cashew paste
    • 1 teaspoon Lime juice
    • 2 teaspoons ginger garlic paste
    • ¼ teaspoon white pepper powder
    • 1 teaspoon Cumin powder
    • 1 teaspoon white pepper powder
    • ½ teaspoon black pepper
    • ½ teaspoon salt or to taste
    • ½ teaspoon sugar
    • ½ teaspoon garam masala
    • ½ teaspoon cardamom powder
    • ½ teaspoon cumin powder
    • ½ teaspoon coriander powder
