
Multani masala is a special blend of spices which is used in Multani Cuisine ( Basically dishes that were cooked in Multan region of Pakistan}. The Multani masala recipe is same as my maternal grandmother used to make, and then I learned it from my Mom who uses it in her many vegetables, curry, and chaat recipes.
Also, this one is almost similar in taste as the masala they use in Moong and Chawal chaat at Multani Dhanda Paharganj if you have been to that past of Delhi.
This recipe of basic Multani masala is used in various dishes like these Multani chole but what makes most of the Multani dishes unique is the combination of this masala with other key ingredient and the cooking technique used which lends a unique flavor to that particular dish.

Ingredients
- 4 tablespoons Amchoor powder (dried mango powder)
- 2 tablespoons mirch degi (kashmiri chilli powder)
- 1 tablespoon Pink salt (Himalyan) or Black salt tablespoon
- 1 tablespoon ginger (sonth) dry powder
- 1 tablespoon black pepper
- 1.5 tablespoon cumin roasted
- 1 tablespoon seeds carom (ajwain)
Instructions
- Mix all the ingredients in a dry grinder jar and process them till you achieve a fine powder .
- Use it as required.

Pink salt is Himalayan salt only. If you do not get that replace it with black salt

My grandma was Multani. She died in 1989, I am still looking for Authentic Multani Sohan Halwa ( which was a bit like Dhodha), Multani kadi, Multani gatte ki sabzi, Multani Dakre, Multani Pakoras (very different from punjabi pakora), Multani Moth dal Kachori, Multani Doli Roti, Multani Fulka ( it was big in size , thin , Fuli hui - Different from punjabi), one dry fruit mix for milk- she used to make. I know I am asking too much but I am searching for these recipes for the last 31 years. There are not authentic Multani chefs. I saw your Multani Masala. It was authentic. I prepared it. It was awesome. That is why I am requesting you. Thanks a lot ma’am

My grandmas were Multani too. But I was young then so I learned few multani recipes from my Mom who is born here in India but learned cooking from her mother. I think I have shared dakre and mung chawal ki chaat on blog also multani chole Wanted to share doli ki roti too but I thought there may not be enough interest I will try to share soon 🙂
