Roasted Beetroot Soup is flavorful soup that comes with loads of health benefits with the power of antioxidants that beetroot contain.
Other day I was reading an interesting discussion going on a popular food group on Facebook . Few people proclaiming themselves as true foodies were dissing healthy food as something that is plain simple and something that people with only poor taste can eat. At first I felt like taking them head on but later It got me thinking why is so that healthy food is equated with unappetizing and bland and eating amounts to be a torture?
To my understanding , healthy does not have to be bland ( unless bland is what you love ) , you can spice up things with so many healthy flavors like garlic, fresh herbs , chill peppers , lime juice and right amount of salt.
In effort make anything people go overboard and completely eliminate fats from their diet. Good fats are healthy , why eliminate? Using healthy oils according to type of ingredient in moderate amount is healthy. While you might shave off some calories going completely oil-less , you might start resenting the dish in long haul.
Remember eating healthy is not just for day or week or a month , its a change of lifestyle commitment, so if the food does not make you reach for it , you are simply not going to make it again and healthy eating regimen might just go out of window. So while choosing recipes , healthy goes hand in hand with the tasty . Try and pick dishes that get you excited for going to the kitchen and get cooking real soon, so you don’t equate healthy with boring and bland ever again. Now that my rant is completed lets get to making this quick roasted beetroot soup.
A ridiculously simple fuss free recipe and such gorgeous and vibrant natural colors in food , one look and you will fall in love with it , taste it and I am sure this will become one of your favorite recipe. Beetroot takes sometime for roasting, but nothing complicated, but healthy does of antioxidants and that you can cook multiple dishes with them makes it an interesting preposition to roast some extra and enjoy couple of other healthy dishes with them.
Roasted beetroot soup recipe is simple, healthy , looks good and makes a great comfort food , what’s more ? you can make some extra and freeze one batch. So DO you have any excuse not to cook roasted beetroot soup 🙂
Total Time: 30 minutes
Serving Size: 1 medium sized bowl
- 400 g beetroots
- 40 g onion chopped
- 1 tablespoons olive oil
- 1 tsp butter
- 1 tsp olive oil
- 1/2 cup milk
- 3 cups vegetable stock
- sprig basil of sweet
- to taste Salt pepper and
Peel and slice beetroots, In a mixing bowl add 1 tsp of olive oil and pinch of salt , toss peeled and sliced beetroot with oil and salt mixture.
Line a baking sheet/tray with parchment paper and roast for 25-30 minutes , place the tray in middle rack.
Now add 1 tbsp of olive oil and its butter into a thick bottomed pan , add sliced onion and basil , cook for 2-3 minutes on medium heat. Now add roasted beets and vegetable stock. You can make your vegetable stocks by boiling any leftover uncooked vegetables combined with garlic, bay leaf, whole red peppers for 15-20 minutes and then straining stock and discarding veggies and spices.
Cover the pan and let this simmer for 10-12 minutes.??Either wait for it to cool down so that you can puree it in food processor or you can use immersion blender to puree it. Finally add milk and either serve with drizzle of cream or if you are not a cream lover like me drizzle some more whole milk.
