    Spicy roast potatoes recipe to make Indian roast potatoes in a pan or oven. I am sharing here a good seasoning for potatoes that is healthy and 100% tasty.

    I have already shared many other potato masala fry recipes like Sesame fried potatoes, Jeera Aloo recipe (Cumin Spiced Potatoes), Chutney wale aloo, South Indian style Potato roast, Nepali Aloo Ko Sabji.

    Potatoes are one ingredient that most have a love-hate relationship with. We love it because potatoes are delicious in any form and sometimes we hate it because you can easily make them unhealthy by deep-frying or adding other ingredients that are not so healthy. 

    But I promise these Indian roast potatoes are healthy and tasty. You are going to be in love with these seasoned fried potatoes.

    The secret to making this tasty potato masala fry is my simple and best roast potato seasoning. I am sharing this in the ingredient list below.

    Ingredients for Spicy Roast Potato

    Potatoes: 

    Best Potatoes to Make Potato Roast 

    To make good roast potatoes You can use any potato variety with medium starch content. Make sure they are firm and have good water content. 

    I suggest using waxy potato varieties to make roast potatoes because these are fluffy inside and hold shape to give you a crispy exterior. You can use Red potatoes or Yukon golds which are ultra-creamy.

    Avoid potatoes with too much starch like russet potatoes. In India, we do not get so many varieties of potatoes easily but make sure to choose waxy potatoes and not the ones with a floury texture.

    Best Seasoning For Potatoes

    For the best taste, I keep seasoning for potatoes super simple. Use very few ingredients but choose them wisely so that it shines through. I seasoned these Indian roast potatoes with Salt, coriander, bit turmeric, red chilli powder and added tanginess with freshly crushed dried pomegranate seeds. And these are the game changer. It adds a nice crunch and taste to these seasoned potatoes.

    Another thing I added to finish these quick roast potatoes is freshly ground flax seeds and sesame seeds. These add to the crispness of potatoes and add a whole lot of nutrition to these spicy potatoes. 

    You will be surprised to know how much nutrition these tiny seeds pack. I often add flaxseeds in my dishes to add extra calcium and healthy omega -3 and more fibre along with other nutrients. Sesame seeds or til are known for their calcium and healthy fats too.

    How to Make It?

    First I lightly fry spices in a pan and add boiled cubed potatoes.

    Cook potatoes till slightly crisp from all the sides. Finish with ground flaxseed and toasted sesame seeds and cook for another 2-3 minutes.

    Potatoes are nicely coated with spices and are crispy now. It is super easy to make. Enjoy as toast topping, sandwich filling with paratha and curd or just like that as a snack with tea.

    The correct way to Eat Flaxseed

    Consuming ground flaxseed is the better way to consume flaxseed. Whole flax seeds pass through the digestive system undigested so our body can not get the benefits. For optimal absorption of nutrition from flaxseeds use the ground flaxseed.

    In this recipe, I have used roasted and ground flaxseed powder which adds to taste and nutrition and makes potatoes more crunchy. 

    Recipe Notes:

    • Do not use too starchy potatoes which break very easily after boiling.
    • Do not over-boil potatoes. Potatoes should be firm after boiling.
    • Add ground flaxseed towards the end for taste and preserving nutrition.
    • You can add a few drops of lemon and chopped coriander if you like.

    Ingredients

    • 400 grams boiled potatoes
    • 2 tablespoon Peanut oil
    • ¼ teaspoon turmeric powder
    • ½ teaspoon salt
    • ½ teaspoon Pomegranate powder
    • 1 teaspoon coriander powder
    • 1 teaspoon red chilli powder
    • 3 tablespoon roasted and ground flaxseed powder
    • 1 tablespoon sesame seeds

    Instructions

    • In a pan heat oil, add salt, turmeric, coriander powder, pomegranate powder, red chilli powder and stir well.
    • Now add boiled potatoes which are cut into cubes.
    • Mix gently to coat all the spices on the potatoes.
    • Cook them until the potatoes are slightly crisp from all the sides.
    • Now sprinkle ground flaxseed and toasted sesame seeds and cook for another 2-3 minutes.
    • Potatoes are nicely coated with spices and are crispy now.
    • Enjoy as toast topping, sandwich filling with paratha and curd or just like that as a snack with tea.
