More often than not I choose rice recipes over other continental one-pot meals like pasta etc most of the time. Simply because rice is a comfort food for me. Also, this is one basic thing which is available in all Indian kitchens. Rice is evidently a quick source of energy and vegan protein. Rice is easy to digest and light on the stomach. After a busy day, eating a burger will not fulfil the nutritional requirement.

When I say one-pot rice meal, it is not necessarily synonyms with a khichdi or a simple veggie pulao. These meals though made in a hassle-free manner will not compromise on the taste meter nor will it turn out to be monotonous. Why so? I have particularly focussed on ‘variety’ while making this list of Indian veg recipes for dinner.

Meal Prep Notes for These Indian Dinner Ideas
- Keep some soaked and drained rice in your fridge for a quick meal.
- Keep cut veggies pre-prepped in your fridge racks to save time.
- Soak and boil the lentils before hand such as chana, Kala chana, rajma.
- Add or subtract any veggies of your preference or health chart.
I have always found fried rice and pulaos to be a great way to feed the essential veggies to your elders and kids. You can also try other one-pot meals such as a cauliflower fried rice, schezwan fried rice, little millet pulao or wholesome soups such as tomato pasta soup.

I usually make the Paneer biryani in Hyderabadi dum style. In this style of biryani, basmati rice is partially cooked and then layered with marinated paneer and herbs.

Biryani and pulao are my go to one pot Indian meals. Though most of these one-dish main meals are super convenient and take very less time to cook, biryani is not one of them. Cooking Biryani requires patience because it is slow cooked, the process of making paneer biryani is long but it is easy paneer recipe.
If you are a biryani purist and think there can be only chicken biryani or mutton biryani please look away right now. You might not consider veg biryani a biryani. Or, You can call it paneer pulao because as per meat eaters biryani is made with meat. But for me, layers of rice and masala gravy with vegetables, paneer or eggs will be a biryani always. You may like to try egg biryani, Hyderabadi dum chicken biryani or boneless chicken biryani recipe.
Taste wise I can’t even begin to describe what a heaven it is. The alternate layers of fragrant long grain basmati rice with spicy soft and aromatic paneer slow cooked to a perfection. Each grain of rice remains separated and fluffy mainly because of the cooking technique. There are a few simple tips that can help you to make a perfect biryani.
Tips for Making Perfect Paneer Biryani
- While cooking rice boil the rice with whole spices to get better taste and aroma. Never boil the rice without spices.
- Marination time is another factor that affects the flavour of biryani. Always marinate the meat or paneer well and for a longer duration for a better flavour.
- Do not overcook the rice in pre-cooking stage 60-70 is good. When in doubt always undercook because you will still get a chance to perfectly cook it during the dum process.
- Fried onion or birista is another step which should never be skipped for biryani.
Best Rice for Biryani
If there is one question that I am asked very often is, Which is best basmati rice for Biryani? I would say any long grain basmati rice is good for biryani. You can try 2-3 good brands and see in which rice remain fluffy, separated and fragrant. Other than the good quality basmati rice, How you cook rice for biryani is also important. Paneer Biryani Recipe
- Paneer Marination*
- Salt to taste
- 1 tsp red chili powder
- 1 tsp turmeric powder
- 1 tsp biryani Masala
- 3 Tbsp Curd/Dahi
- 1 tsp ginger grated
- For Biryani*
- 200 g paneer
- 200 g basmati rice long grain
- 2 Tbsp Ghee
- 1 tbsp Oil
- 1 tsp cumin seeds
- 1-2 Star anise
- 2 bay leaves
- 7-8 Peppercorns
- 1- inch cinnamon stick
- 2 cardamom
- 1 green cardamom
- 3-4 cloves
- 3 Onion sliced
- 1 tomato chopped
- Salt to taste
- 1 tsp red chili powder
- 1 tsp turmeric powder
- garam masala powder
- 2 tbsp milk
- 10-12 saffron strands
- 4 tbsp green coriander
- 2 Tbsp pudina/mint
- warm the milk and keep saffron strands in the milk for soaking.
- For making paneer marination, whisk together curd/yogurt, salt, red chilli powder, turmeric powder and biryani powder.
- Add paneer cut into small cubes in the mixing bowl for marination.
- In a big pot of boiling water add bay leaf, big cardamom, green cardamom and salt.
- Add washed and soaked rice and cook till the rice are 60-70% doneness. Drain out the water and keep these partially cooked rice aside.
- Heat oil in a pan and add one sliced onion to it. Cook the onions till it becomes crisp and dark brown.
- For making biryani, in the same pan heat 2 Tbsp ghee in a big pan and add whole spices, cumin, 1-2 star anise, 1-inch cinnamon stick, 2 Cardamom, 3-4 cloves, peppercorn and cook for 1 minute on slow heat till spices are fragrant.
- Add sliced onion and cook for another 2 minutes. Now take out half the amount of light brown onion and keep them aside.
- In the remains onion, add grated ginger fry it and add tomatoes and salt, red chili powder, garam masala powder and mix well. Cook till tomatoes are mushy.
- Add water and mix well
- spread this masala in the whole pan and make a layer of this, now add a layer of cooked basmati rice and spread it over the masala layer.
- Sprinkle green coriander and mint leaves over this and lightly fried onion.
- Now spread marinated paneer for the second layer. Add light brown onion, coriander, and mint leaves.
- Follow it up with the second layer of partially cooked rice.
- Finally, add warm milk in which saffron is soaked and tightly cover it.
- Cook it on lowest heat for 15 minutes and serve paneer biryani hot.
