How to Cook Cauliflower Rice

After much scepticism, I tried making cauliflower rice for the first time when I was on US trip last year. After dining out and trying popular food places we were finally in a rented apartment in Los Angeles, and I was in a state where I could kill for homemade food. Husband was like What?? Riced cauliflower…Is that even a thing! Yes! That’s why it is on the grocery store shelf. Now the challenge was to live up to my motto “A healthy diet does not have to be boring at all”. That’s why I thought to makeover his favourite Fried rice recipe to cauliflower fried rice recipe. It is quick to make and tastes incredible, is another factor for cooking cauliflower rice this way. It is always easier to start with any new ingredient by incorporating it into your tried and tested recipe.
Does Cauliflower Rice Tastes like Regular Rice
Now many of you have asked me if cauliflower rice tastes like regular rice? The answer is simple, No it does not! But the texture and ingredients you use actually make it quite flavourful. I mean if I am craving a Rajma chawal and eating that I would not replace regular rice with cauliflower rice. But if I am making fried rice with lots of ingredients, I can definitely experiment with cauliflower rice.
Because cauliflower is lower in calories, low carb, low glycemic index and one of few veggies that you can eat on the vegetarian keto diet. Also it absorbs flavours nicely like rice.
But really, if you are on verge of trying to replace regular rice with cauliflower rice. This is Paleo, vegan and is gluten-free. Like any other recipe, you can make it healthy or unhealthy depending on what goes into the recipe.

- 800 grams Cauliflower rice
- 1/2 cup Onion chopped
- 1/4 cup tomatoes chopped
- 1/4 cup carrots chopped
- 1 cup mushrooms chopped
- 1/5 cup cashew toasted or fried
- 1 Tablespoon oil
- 1/2 teaspoon finely chopped ginger
- 1/4 teaspoon garlic paste
- 1 teaspoon cumin seeds
- 1/2 teaspoon garam masala powder
- 1/2 tsp red chilli powder/paprika as per your choice
- Salt to taste
Heat oil in a pan and add cumin seeds, once cumin seeds start to pop up add ginger and garlic paste.
Immediately add chopped onion and sauté then till translucent.
Now add chopped tomatoes and cook for 2-3 more minutes.
Add finely carrots and mushrooms. Then cook it till the vegetables are well done.
Add, salt to taste, garam masala, red chilli powder and mix in the masala.
Finely add cauliflower rice, mix and cover the pan.
Cook for 5 Minutes and serve the cauliflower fried rice hot.
Top them with fried cashew and some chopped coriander and serve with yogurt.
