Few days ago I posted a phone photo of ingredients on my Facebook page and asked friends to choose from Thai and minestrone and popular choice was Thai soup, so I made this Thai vegetable soup and next day it was turn for minestrone but with a more healthy punch and taste.
Ideally it is served in a bowl , but I feel in winters food especially soups gets cold very fast in bowls so I use mugs to serve my soup and in this case this one is beer mug from one of husbands old unit which is being put to better use for serving soups 🙂
Winters are best times to enjoy and even make a meal out of soups, nothing comforts like a warm bread and hot steaming bowl of soup.
Try this once, I am sure you will love the warm flavors, and the way it makes you feel energetic and nourished after eating, because it is so light and refreshing as well as veggies helps to make you feel full. At total 52 calories per serving this is surely low on your calorie budget but packed with powerful antioxidants and nutrition .
When I say this is power soup and is very healthy I mean it, Can you imagine that single serving of this soup is good enough to provide you with 65.0 % Vitamin A for your daily requirement .
As I said I like to make meals out of soups, so to make it more filling I added some Saffola masala oats towards the end, which not only made it more wholesome but made it tastier too. You can make this Thai vegetable soup recipe with out oats too, both ways it tastes delicious.
