Homemade tortilla soup is an easy vegetable soup and is a popular Mexican dish made with lots of vegetables and topped with fried strips of Mexican Tortilla. Tortilla soup is not only a healthy soup but is very easy soup recipe. All it takes is 15-17 minutes of your time and few vegetables, beans and herbs to put together this lip-smacking delicious meal in a bowl kind of soup.
If you love Mexican food, this simple and easy soup recipe is must have in your recipe repertoire. Also, if adding vegetables to your meal is the problem area in your food, this tortilla soup is your best bet. If you love chicken you can add shredded chicken too and call it chicken tortilla soup. Cooking for me in never rigidly sticking to any particular recipe, it’s all about customising and adapting any dish to your taste. Authenticity hardly matters to me if it does not taste good. If you feel any ingredient adds to the overall appeal of the dish and is healthy too by all means one should try and experiment to add personal touches.
Coming back to tortilla soup, the flavour of the soup really comes from the spices and fresh coriander leaves. So it at all I would say not to change anything is spices. Cumin, a mix of Mexican spices and paprika or red chili combined with the squeeze of lime juice and crunch of tortilla chips add the burst of flavours in every spoon and warm you up from inside. Tortilla soup is one of my go-to dinner recipes during cold winter months and everyone in the family loves it too.
When I am talking about tortilla soup, there are mainly two broad recipes of this healthy vegetable soup. One is thin broth like ( The version I made here ) and the other version is creamy tortilla soup in which tortillas are cooked along with broth and mush of corn tortilla makes it creamy. Originally Cut strips of tortilla are used in making this soup but since I prefer to add tortilla chips as it suits more to our taste I have added tortilla chips from the packet. You can add anything from these tortilla strips or tortilla chips.
If you like to use Tortilla strips, just cut them in strips and deep fry the tortilla strips till they become crisp, drain them and use in place of tortilla chips. And never forget to top it up with coriander leaves and a good squeeze of lime juice.
