Vegetable Pasta in White Sauce recipe. My recipe of pasta in a silky smooth, glossy and cheese white sauce. it is a delicious pasta recipe for everyone when you want to take a break from pasta in red sauce. In this white sauce pasta recipe, I have used lots of green vegetables to make the dish healthier.
We love pasta dishes and make it quite often at home. It’s such a great dish to cook and you just need few basic ingredients, few herbs, and seasoning. You have a great tasting pasta dish on your table in no time.
For making this pasta in the vegetable sauce I went with classic way. I made the white sauce for pasta separately and then combined veggies, pasta and seasonings to make this classic Pasta in white sauce.
Just like other pasta recipes, this is also highly customizable in terms of vegetables you use in making the dish. I used broccoli and kale for making this pasta, you can use any vegetables of your choice.
I made fresh white sauce or Béchamel sauce for this recipe. You can make the white sauce ahead and store in the refrigerator for up to 2-3 days. Pasta can be boiled ahead and stored in the refrigerator. This is a very simple and easy white sauce recipe and gives a perfect white sauce each time I make it.
Pasta in white Sauce is an excellent lunch box recipe. You can eat it or eaten cold. If you don’t have time to cook everything in the morning, you can prepare the sauce ahead, keep the chopped veggies and boiled pasta in the refrigerator. In the morning all you have to do is just put together everything and pack it.
In terms of seasonings, you can use dry seasoning to flavor the pasta dish or use fresh herbs as per your taste and availability. I personally like to use fresh herbs as I grow most of the fresh herbs in my balcony garden.

Ingredients
- 200 g pasta
- 1 tablespoon butter
- 1 tablespoon Maida/ white flour
- 200 ml milk
- 2 tablespoon olive oil
- 100 g broccoli
- 4-5 Kale leaves
- Salt to taste
- Red chili flakes
- 1 teaspoon black pepper powder
- Salt to taste
Instructions
- Cook pasta as per instructions on the packet. or watch the video for the instructions.
- Heat up 1 tablespoon butter in the pan.
- Add 1 tablespoon maida to the pan and cook it on slow heat for 5-6 minutes to make the roux.
- Cook it on slow heat so the rawness of flour is gone.
- Add small amount of milk at a time and keep the sauce stirring till all milk is used up and the sauce starts to thicken up. Switch off the flame and keep the suace aside.

- Now heat up a tablespoon of olive oil in the pan and saute broccoli florets and kale or spinach whatever you are using. Saute till veggies are soft.
- Add cooked pasta and white sauce you prepared earlier. Follow that up with salt, red chilli flakes and mixed herbs.
- Add grated cheese, mix everything well and serve it hot.
