The Indian breakfast of vegetable upma and cups of steaming hot filter coffee is favorite breakfast in most South Indian homes. But vegetable upma with steaming cup of masala chai is what my family loves.
Vegetable Upma is one of very popular breakfast recipes from Southern part of India. Each one of having these type of go to recipes for the times when you don’t want to cook your usual meal or last minute meal idea when nothing is planned.
I usually cook it when I want a break from my usual eggs, fruits toasts and smoothie kind of breakfast routine, mostly on weekends or even on off days during a week doing nothing much except some planning and generally relaxing.
Regarding VegetableUpma being healthy or not, or it is all carbohydrates argument, I have always had this philosophy any food can be as much healthy or unhealthy as you want it. Most of the times healthy or unhealthy depends upon the way you cook it, and the ingredients you add to it. Last but not the least how you eat it. So even a Siamese can be made healthy if you think creatively, or a salad can be unhealthy if it is loaded with fatty dressing, isn’t it?
To make this one healthy, I added lots of green chilies and amla ( Indian Gooseberry ), both of which are very healthy and great source of micro-nutrients even if consumed in small quantities. Grated cauliflower tastes good and add bite to it. Most importantly, I paired it with a side of beans and avocado salad which is a great source of proteins and avocado adds in good fats. As I said healthy or unhealthy is what you choose, think a little out of the box and you will do fine. OK if you belong to the authentic way to cook and eat, this way of eating may not be for you.
Sometimes for the evening tea or Sham ka chai nashta I just serve the vegetable umpa with a cup of masala chai which is quite a filling tea time snack.
