The perfect summer mocktail or cocktail, Watermelon Mojito is is simply amazing cool and refreshing drink. A pitcher of this is must on my party menu during summer months. Icy coldness is so welcome during hot summers here. And when that comes withadded bonus of antioxidants from lemon and watermelon, it is more than a welcome treat.
Making watermelon mojito is very simple, you can make the base ahead for the party and keep it in your refrigerator. When your guests arrive you just can pour seltzer or club soda and serve it immediately or enjoy a tall glass when you curl up with on the couch with your favourite book.
You can add any natural sweetener like honey or agave nector if you like it sweeter, I prefer to omit using any extra as watermelon juice is enough to provide me the right amount of sweetness for our family’s taste.
If you are serving it for kids or people who avoid alcohol you can safely skip Bacardi and you have a refreshing mocktail, add Bacardi and you have Watermelon Mojito. Pair it with a healthy salad or a simple sandwich for a delicious summer meal.
