That’s for sure that, if you ate watermelon, you are not going to repent it, watermelon undoubtedly tops my list of summer fruits, even way above mango which is another favourite. Simple yet so exquisite we love to eat watermelon in various forms. Simply cubed and sprinkled with rock salt, agua fresca or this very summery, very refreshing watermelon feta cheese salad.
When I first time I tried this salad, I was vary of combining sweet water melon with savoury feta, but the combination turned out to be surprisingly delicious with three different textures which combined beautifully, lime and balsamic vinegar dressing provides it a nice kick. If You are fan of summer salads, this one is a sure shot winner.
If you are not a feta fan you can use your favourite here, but I would strongly recommend feta (not my favourite cheese btw) to any other cheese. I have read somewhere that if you don’t like salty and pungent flavour of feta you can use French feta which is milder, but I did not find that here in India so gone with classic, but liked it as it perfectly complements the sweet taste of watermelon and almost bland taste of cucumbers.
- 4 cups watermelon seedless , cut into cubes
- 2 English cucumbers firm , cut into slices
- 75 g feta cheese , crumbled
- 1 Tablespoon balsamic vinegar
- 1 Tablespoons extra virgin olive oil
- sea salt coarsely ground
- black pepper Freshly ground
In a bowl combine cubes watermelon and cucumber slices. Sprinkle crumbled feta cheese over the salad.
Drizzle balsamic vinegar and extra-virgin olive oil over it.
Follow it up with sea salt and fresh ground black pepper. serve it chilled immediately.
