    Watermelon feta mint Salad recipe

This watermelon feta salad recipe with mint and cucumbers is a burst of flavours in your mouth and summer colours on your plate. It's super easy to make at home.

This simple, healthy watermelon Feta salad with honey lemon basil vinaigrette is perfect to serve for your BBQ or picnics in summers. For me, summer is all about salads! Simple refreshing so easy to put together, almost no effort healthy and most importantly, Salads are DELICIOUS!

Sweet ripe watermelon salad combined with feta cheese and fresh mint is simply dressed with olive oil and lime juice. It’s a sweet-and-salty combination that looks just beautiful on the table for a backyard cookout, a potluck, or even a Sunday brunch!

Watermelon tastes great on its own! Just add a squeeze of lime juice a dash of sea salt and black pepper and it tastes good! But add Cheese to watermelon this will become of most refreshing summer salad ever. This tasty salad is simply too good!

How to Make Watermelon Feta Salad

    Ingredients You need

Now that I have made it clear that How much I love this Greek watermelon Feta salad let’s talk about its ingredients.

    Sweet ripe watermelon for salad

Ripe Watermelon: Pick a sweet ripe watermelon. Seedless watermelon is better if you can get it. Due to lockdown going on these days I got what was available.

English cucumbers: cucumbers gives it a nice summery touch and refreshing taste and texture.

Cheese: Feta cheese, Goat Cheese. You can leave out goat cheese if you wish to but it adds another layer of taste in this simple salad so it's upto you.

Herbs: Mint leaves, basil leaves Fresh mint adds a lot of flavours that screams summer. You can also substitute mint for fresh basil which tastes nice too.

    Seasoning: sea salt, black pepper,

Honey Lime Vinaigrette Dressing: lime or lemon juice, honey.

For the dressing, you can use simple honey lemon vinaigrette. Or like me, use Basil honey vinaigrette to add an extra layer of flavour to your watermelon cucumber feta salad.

    Stepwise Watermelon Feta Salad Recipe

Place watermelon chunks in a large bowl.
Cut cucumbers into medium-sized chunks and put them in the bowl as well.
Cut Feta cheese into very small cubes. Instead of cubes, you can use crumbled feta cheese. I used feta cheese cubes and also added soft got cheese so more fun 🙂
    Add chopped mint leaves.
For making dressing squeeze lemon juice, add olive oil, honey, minced basil, sea salt, black pepper and whisk them well.
Pour honey lemon basil salad dressing over watermelon feta cucumber mint and give them a light tossing.
    Serve it chilled immediately.

Pro Tip: Always season your salads nicely because less seasoning can make them taste bland and not so desirable. For making best watermelon salad with Feta use best quality feta… to make it Amazing. Do not use Pre crumbled Feta as far as possible.

The saltiness of feta brings out the sweet taste of watermelon, it actually brightens up the watermelon.

Tips to Make Best Watermelon Feta Salad

    • Seeding watermelon is cumbersome so try and use seedless watermelon.
    • Do not cut the watermelon into big chunks. Medium-sized cubes of watermelon are ideal for dressing to work its magic.
    • You can skip cucumber or use it if you like that.
    • Use chilled watermelon and make it fresh for the best taste.
    • Do not let it sit for too long in case you want to make it ahead, pour dressing when you are ready to eat.
    • Use best quality ingredients like olive oil etc because USP of these simple recipes is quality of fresh produce.
    • I have not used lemon zest in the video but you can add lemon zest in the basil honey vinaigrette to add more refreshing taste.
