- 2 tablespoon Oil
- 1 onion chopped
- 2-3 cloves garlic optional
- 2 cups white rice
- 1 cup chopped tomatoes
- 1 Tbsp Tomato paste
- ½ teaspoon red chili paste
- 2 cups vegetable stock
- ½ teaspoon oregano
- Salt to taste
- 200g potato optional
- Use any type of white rice or brown rice as preferred.
- Wash and dry the rice before you want to cook.
- Use tomato salsa in place of raw tomatoes.
- Add red pepper and red chilli to give more color and flavor to dish.
