Peel and grate lauki/bottle gourd.
In a mixing bowl add grated lauki, besan, chilli powder, salt, red chilli powder, coriander powder, coriander leaves in the grated lauki and mix well.
Grease palms of your hands and make small balls/ kofta from this mix and keep it aside.
Heat oil in a pan and deep-fry the lauki kofta on low to medium heat.Once they are brown and crisp, remove them on a kitchen paper napkin to drain excess oil.
In another pan heat 2 tablespoon oil and add cumin seeds and bay leaves. Once they start to crackle, add the onion paste.
Stir and cook this till they are golden brown and then add chilli powder, turmeric powder, garam masala and salt and tomato puree. cook this till oil starts to separate.
Add some water to it and bring it to boil.
Add the fried kofta and cover the pan and let the gravy simmer for another 5 minutes.
Garnish with coriander leaves and serve the kofta curry hot with rice or roti.
