Ingredients

  • 400 g bottle gourd Lauki
  • 75 g gram flour besan / Chickpeas flour
  • 1 teaspoon turmeric powder
  • 2 teaspoon coriander powder
  • Salt to taste
  • 2 Tbsp Red chili powder
  • Oil for deep frying
  • ¼ cup onion paste 2 medium sized onion
  • 3 Tomatoes pureed
  • 1 teaspoon turmeric powder
  • 1 Tsp garam masala powder
  • Salt to taste
  • leaves Fresh coriander
  • 1 Tbsp Ginger green chili paste
  • 1 Tbsp Jeera

Instructions

  • Peel and grate lauki/bottle gourd.
  • In a mixing bowl add grated lauki, besan, chilli powder, salt, red chilli powder, coriander powder, coriander leaves in the grated lauki and mix well.
  • Grease palms of your hands and make small balls/ kofta from this mix and keep it aside.
  • Heat oil in a pan and deep-fry the lauki kofta on low to medium heat.Once they are brown and crisp, remove them on a kitchen paper napkin to drain excess oil.
  • In another pan heat 2 tablespoon oil and add cumin seeds and bay leaves. Once they start to crackle, add the onion paste.
  • Stir and cook this till they are golden brown and then add chilli powder, turmeric powder, garam masala and salt and tomato puree. cook this till oil starts to separate.
  • Add some water to it and bring it to boil.
  • Add the fried kofta and cover the pan and let the gravy simmer for another 5 minutes.
  • Garnish with coriander leaves and serve the kofta curry hot with rice or roti.

Tips and Tricks for Making Best Lauki Kofta Curry
  • You can use any bottle gourd-long or round.
  • Drain the excess water from grated lauki as it prevents the koftas from splitting while frying.
  • Add rice flour to make your koftas more crunchy.
  • Set the temperature of oil right while deep frying the koftas.
  • Make the gravy more rich by adding cashew paste.
  • Add a little sugar to give it sweet and salty flavor.
  • Do not overcook the gravy once the koftas are added.
