Equipment

  • Air fryer

Ingredients

  • 1 cup Ragi Finger Millet flour
  • 2 cups finely chopped fresh Methi Fenugreek leaves
  • 1 medium-sized Onion finely chopped
  • 2 Green Chilies finely chopped (adjust as per taste)
  • 1 teaspoon Ginger-Garlic paste
  • ½ teaspoon Turmeric powder
  • 1 teaspoon Red Chili powder adjust as per taste
  • 1 teaspoon Cumin seeds
  • Salt to taste
  • Water as needed to make the batter
  • Oil spray or brush for greasing

Instructions

  • Prepare the Ingredients: Wash the methi leaves thoroughly and chop them finely. Similarly, finely chop the onions and green chilies.
  • Mix the Batter: In a large mixing bowl, combine the ragi flour, chopped methi leaves, onions, green chilies, ginger-garlic paste, turmeric powder, red chili powder, cumin seeds, and salt. Mix well.
  • Add Water: Gradually add water to the mixture. The goal is to create a thick batter that can hold its shape. Be careful not to make the batter too runny.
  • Preheat the Air Fryer: Preheat your air fryer to 180°C (356°F). This step is crucial for ensuring that your pakodas cook evenly and get that desired crispiness.
  • Shape the Pakodas: Once the batter is ready, take small portions and shape them into balls or small patties. If the batter sticks to your hands, apply a little water or oil to your palms.
  • Grease the Air Fryer Basket: Lightly spray or brush the air fryer basket with oil. This prevents the pakodas from sticking and helps in achieving a nice golden color.
  • Cook the Pakodas: Place the shaped pakodas in the air fryer basket, ensuring they don't touch each other. Air fry them for 15-20 minutes. Halfway through, you may gently flip them to ensure even cooking.
  • Check for Doneness: The pakodas are done when they have a firm exterior and a rich, golden-brown color.
  • Serve Hot: Serve these delicious Air Fried Ragi Methi Pakodas hot with a side of mint chutney or tamarind sauce.

Notes

Consistency of Batter: The key to perfect pakodas is the consistency of the batter. It should be thick enough to hold its shape.
Flavor Variations: Feel free to add other spices or ingredients like grated carrots or squash for a different flavor profile.
Serving Suggestion: Pair these pakodas with a hot cup of tea or as a starter for your meals.
