Boil milk in thick bottomed pan , once milk starts to boil reduce the heat to minimum and add grated carrots.
Let the kheer simmer for 20 minutes till carrots are well cooked add sugar and switch off the heat.
Now take out ½ cup of carrots and milk and let it cool a bit, when it is cold enough to handle blend the mix to a fine paste in a blender and return this blended paste to the pan of kheer.
Mix it thoroughly, add saffron strands and serve it in individual bowls garnished with almonds and other dry fruits .

It is healthy and tastes great both cold or hot and that makes it great dessert for both winters and summers.
