langar Dal - Maa Chole Ki Dal

Ingredients

  • ½ cup chana dal
  • ½ cup Urad dal split
  • ½ teaspoon salt
  • ½ teaspoon chili powder Red
  • ½ turmeric powder
  • ½ teaspoon garam masala
  • 2 tablespoon ghee (clarified butter)
  • 3 tablespoon onion tomato masala
  • 1 teaspoon coriander powder
  • 2 red chilli dried
  • 2 green chilli dried

Instructions

  • Take chana dal and maa ki dal/ urad dal and wash them 4-5 times till water runs clear.
  • Now in a pressure cooker add both the lentils add 4 cups of water along with salt , turmeric and chili powder, onion and tomato masala and asafoetida. If you are using regular pressure cooker it will take 4-5 whistles of pressure cooker.
  • For making Lagar dal in Instant pot, follow same procedure as above and set the pressure cooker and timer to 20 minutes.
  • While lentils are pressure cooking you can make tadka or final tempering alongside.
  • Take a small frying pan and add generous amount of ghee, I used 2 tablespoon sometimes I use olive oil too but it tastes better if you use ghee (clarified butter).
  • When ghee melts reduce the heat to lowest add cumin seeds.
  • Add in chopped ginger and allow them to splutter for 30 sec.
  • Next add in slit whole green chillies, whole red chillies (both optional)
  • Stir once or twice and add coriander powder and garam masala powder.
  • Immediately add it to the cooked dal and mix well and let the dal simmer for 5 minutes on slow heat and serve with Nan/tandoori Roti or Parantha.

Notes

 
  • All Dals generally thicken as they cool down. This dal also thickens as it cools down so keep the final consistency accordingly in final step of cooking.
  • If there are leftovers, you can reheat leftover dal by adding a bot of hot water to correct it's consistency.
