Heat oil in a pan and add cumin seeds, once cumin seeds start to pop up add ginger and garlic paste.
Immediately add chopped onion and sauté then till translucent.
Now add chopped tomatoes and cook for 2-3 more minutes.
Add finely carrots and mushrooms. Then cook it till the vegetables are well done.
Add, salt to taste, garam masala, red chilli powder and mix in the masala.
Finely add cauliflower rice, mix and cover the pan.
Cook for 5 Minutes and serve the cauliflower fried rice hot.
Top them with fried cashew and some chopped coriander and serve with yogurt.
