Get the onions and green chillies and chop it into tiny pisces. Keep it aside for a while
Start whisking the eggs. You can add milk if you wish to since it makes the eggs softer and fluffier.
In a pan, melt the butter until it is very hot. In the same pan, add the previously chopped onions and chillies.
Now, add the whisked eggs to the pan. Swirl the pan to ensure that the omelette mixture is uniformly distributed and covers the whole pan.
Place two pieces of bread over the omelette. Flip the bread right away. The egg mixture would cling to the bread a little. Season with black pepper.
On a medium burner, cook for 30 seconds. Flip the omelette and the bread pieces over.
Now, fold the sides of the omelette as shown in the picture and add the slices of tomato on one slice and a slice of cheese on the other.
Place the two pieces together and wait for the cheese to melt.
Now put it out of the pan and garnish it with chilli flakes and mixed herbs. You can even use coriander leaves or mayonnaise.
Cut the bread omelette sandwich into four pieces after removing it from the pan. It's time to make the ultimate street food nashta.
