Ingredients

  • 400 grams Fresh strawberries
  • 600 grams sugar
  • 2 tablespoons lemon juice

Instructions

  • Wash strawberries thoroughly to remove any blemishes or excess stems. Cut the fruit into small pieces and place in a pan or large pot as per quantities.
  • Turn on the heat and keep it medium.
  • Next, add sugar to the pot. Stir the sugar into the fruit until it is completely dissolved.
  • Now it's time to add the acid. Add lemon juice, stir well and then bring the mixture to a boil over medium heat.
  • Once it reaches a boil, turn the heat down to low and let the jam simmer for a few minutes. During this time, be sure to stir occasionally to prevent sticking and burning.
  • Remove from heat and ladle into a clean jar. Be sure to leave about ½ inch of headspace at the top of each container so that the jam has room to expand as it cools. Cover tightly with lids or screw-on tops and let cool completely.

Notes

Remove any blemishes and use fresh fruit.
Cook the fruit until soft.
Add sugar slowly. Taste as you go and stop when it's as sweet as you like it.
