Ingredients

  • 1 can mixed beans drained and rinsed
  • 1.5 cup broccoli chopped into bite-sized pieces
  • ½ cup cherry tomato
  • 2 cups lettuce
  • 2 tablespoons tahini
  • 1 tablespoon lemon juice
  • 1 tablespoon maple syrup
  • 3 tablespoons water
  • Sea Salt
  • Black pepper to taste

Instructions

  • In a large bowl, combine the mixed beans, broccoli, red onion, red pepper, and parsley.
  • In a small bowl, whisk together the tahini, lemon juice, garlic, water, salt, and pepper until smooth and creamy.
  • Pour the tahini dressing over the salad and toss until everything is evenly coated.
  • Serve immediately or chill in the refrigerator for at least an hour to allow the flavors to meld.
