Vegan Chia Seed and Berry Pudding

Ingredients

  • 300 ml Almond milk
  • 2 tbsps honey
  • ¼ teaspoon cardamom powder
  • 4 Tbsps chia seeds
  • 100 g raspberry
  • 50 g blueberry
  • 50 g blackberry
  • 4 - 5 apricots
  • ¼ teaspoon lemon zest

Instructions

  • Take a bowl and stir in honey and cardamom powder in the almond milk.
  • Whisk it and tip in chia seed in this bowl. Soak the chia seed in almond milk for minimum 4-8 hours and keep this bowl in refrigerator all this while. You can soak chia seeds overnight as well.
  • In a small blender jar blend together all the berries except 2-3 from each variety.
  • now to assemble this tilt the serving glass and pour berries puree and follow it up with chia seeds mix and top it with remaining whole berries, apricot and some lemon zest. Serve it chilled

Notes

NOTE
If you like the uniform layering, you need to set the berry layer first in the freezer for2-3 hrs and then follow it up chia seeds pudding.
If you don't want to buy all these varieties you can use one variety and make this Chia seed pudding with berries. It will be absolutely tasty that way too.
