Mumbai Style Egg Curry | Street Style Anda curry

Mumbai style Egg curry is egg curry cooked with lots of spicy chilly and topped with grated cheese and serve like a street style food along with butterd pao buns.  I have an egg obsession, if you don't really know till now, you must see few of egg dishes I cook (Egg Recipes). Ingredients

  • 6 Eggs
  • ½ cup onion Chopped
  • 1 cup Tomatoes Chopped
  • 1 teaspoon cumin
  • 1 teaspoon ginger paste
  • to taste salt
  • 1 teaspoon red chilli powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala powder
  • 1.5 teaspoon Pav Masala Bhaji
  • lemon juice
  • cilantro leaves

Instructions

  • Hard boil eggs, peel , grate the and keep them aside.
  • Heat 2 tablespoon oil in the pan, add cumin seeds and let them pop for ½ a minute.
  • When cumin seeds start to splutter add ginger paste and stir it.
  • Now add chopped onion and sauté them till they are translucent and pink.
  • Add fresh tomato puree at this stage and also turmeric powder, red chilli powder and salt.
  • Cook it for 4-5 minutes and add ready made tomato puree to it.
  • Cook another 5-6 minutes over low heat and add coriander powder , garam masala powder and pao Bhaji masala.
  • Now mix grated eggs, and stir it well and it's ready to serve.
  • Now to serve it take it out in a bowl, sprinkle some chopped green chilli if you like it spicy and some coriander leaves. Finally add some lemon juice and grated cheese and serve it hot with buttered and toasted buns.
