  • 800 grams Cauliflower rice
  • ½ cup Onion chopped
  • ¼ cup tomatoes chopped
  • ¼ cup carrots chopped
  • 1 cup mushrooms chopped
  • cup cashew toasted or fried
  • 1 Tablespoon oil
  • ½ teaspoon finely chopped ginger
  • ¼ teaspoon garlic paste
  • 1 teaspoon cumin seeds
  • ½ teaspoon garam masala powder
  • ½ teaspoon red chilli powder/paprika as per your choice
  • Salt to taste


  • Heat oil in a pan and add cumin seeds, once cumin seeds start to pop up add ginger and garlic paste.
  • Immediately add chopped onion and sauté then till translucent.
  • Now add chopped tomatoes and cook for 2-3 more minutes.
  • Add finely carrots and mushrooms. Then cook it till the vegetables are well done.
  • Add, salt to taste, garam masala, red chilli powder and mix in the masala.
  • Finely add cauliflower rice, mix and cover the pan.
  • Cook for 5 Minutes and serve the cauliflower fried rice hot.
  • Top them with fried cashew and some chopped coriander and serve with yogurt.
