Soya Bhurji Recipe

An easy spicy soya granules recipe, this Soya bhurji also known as Nutrela Bhurji is a delicious and spicy dry sabji made with soya granules. Serve it for dinner or breakfast with as a side or as a sandwich or paratha stuffing. It’s delicious, healthy and high protein vegan option.

Ingredients

  • ¾ cup Soya granules
  • 2 teaspoon Olive oil
  • 1 teaspoon Cumin seeds
  • 1 green chillies - Finely chopped
  • 1 teaspoon ginger Finely chopped
  • ¼ cup onions Finely chopped
  • ½ cup capsicum Finely chopped
  • ¼ cup Chopped tomatoes chopped
  • ½ teaspoon Turmeric powder
  • ½ teaspoon Chilli powder
  • ½ teaspoon Garam masala
  • ¼ teaspoon Salt to taste
  • 1 tablespoon Finely chopped coriander - 1tbsp

Instructions

  • Soak soya granules in hot water. Add salt while soaking to season it nicely.
  • After 10 minutes squeeze out the granules to remove excess water.
  • In a microwave-safe bowl add olive oil, cumin seeds, green chillies and mix them with oil.
  • Now in your LG microwave select Healthy heart Menu, press number 10 and then press start.
  • When microwave beeps take this bowl out of microwave.
  • add in the finely chopped onion and capsicum tomatoes, turmeric powder, chilli powder, garam masala and salt.
  • Quickly return the bowl in the Microwave and cook this veggie masala.
  • When microwave beeps take this bowl out of the microwave.
  • Add in soaked Soya granules along with ¼ cup of water, mix well and return the bowl quickly in the microwave.
  • Finish cooking cycle and your delicious soya bhurji is ready.
  • You can serve this protein-rich side dish is any meal, breakfast, lunch or dinner.

Notes

  • Soak soya in salted water to avoid bland tasting sabji.
  • You can make the same recipe without a microwave.
  • To make it heart-healthy I used olive oil. You can use any unrefined oil of your choice or even ghee.
  • If you do not have coloured bell peppers/capsicum you can use a single colour of capsicum. It will not affect the taste. But the colour of the sabji can change depending upon which coloured bell peppers you are using.

If you are using any other microwave,

In a microwave-safe bowl add olive oil, cumin seeds, green chillies and mix them with oil.
Set timer for 3 minutes on medium power.
After the beep add in the finely chopped onion and capsicum tomatoes, turmeric powder, chilli powder, garam masala and salt.
Set timer for 8 minutes on medium power.
Now once again when microwave beeps, take out the bowl and add this cooked masala in cooked dal and rice mixture along with ½ cup of milk. Mix everything and place the bowl in the microwave once again.
Set timer for 5 minutes on medium power. 
Once microwave beeps your brown rice masoor dal pulao is ready.
