Authentic Falafel Recipe

This is probably one of most easy Falafel recipe you can make. These Crispy homemade falafel with hummus are perfect party starters.  Serve them falafel sandwich, pita wraps, or drizzle some tahini sauce. These taste amazing.

Equipment

  • Wok or Deep pan
  • Food processor

Ingredients

  • 1 cup Chickpeas dried
  • 1 cup parsley chopped
  • 1 jalapeno chopped
  • ½ cup coriander leaves cilantro
  • Salt to taste
  • 1 teaspoon Coriander powder
  • 1 teaspoon Paprika
  • 1 teaspoon Cumin
  • 2 tablespoon Chickpeas flour/besan
  • ½ teaspoon red chilli
  • ¼ cup Onion chopped optional
  • Oil for deep frying
  • 2 Garlic pods

Instructions

  • Soak dried Chickpeas for 4-5 hrs minimum. Overnight soaking is best.
  • Drain out the water.
  • In a food processor blend chickpeas, chopped parsley, coriander leaves, salt, cumin, coriander powder, chickpeas flour, paprika, red chilli and make thick coarse paste.
  • I prefer not to add any extra liquid, but if you really need add 1 or 2 tablespoon of water.
  • You can make this mixture in advance and refrigerate till you need to use it or immediately fry falafel.
  • Heat oil in deep pan till it reaches to smoke point or if you are using deep fryer let it reach 350°F . With the help of two spoons shape falafels or make small balls and drop these balls in hot oil.
  • Cook for 3-4 minutes and with slotted spoon, removes from oil on kitchen napkin to remove excess oil.
  • Serve with Hummus or Tahini Sauce.

Notes

  • Always soak the chickpeas properly 4-5 hours or overnight before grinding them in a mixer.
  • Use dried and soaked chickpeas and never Canned chickpeas.
  • Best Method is to deep fry the falafels.
  • You can make them ahead and freeze them uncooked.
  • If You want to store cooked falafels you can store them in fridge for 5-6 days.
  • To reheat falafel, best method is combination heating. First pop them in microwave for a minute and then pop them in regular oven for 4-5 minutes to recrisp the surface.
  • If mixture is too wet add chickpeas flour and never the regular white flour.
  • Baking soda helps them to soften from inside but also deep fried food absorbs more oil so it's upto you to use that or not. I avoid.
