A simmered garlic, ginger, lemon, and apple cider vinegar tonic sweetened with raw honey, made in one batch and taken by the tablespoon. A folk-style pantry remedy, not a medical treatment for arterial plaque.
1/3cupgarlic clovescloves peeled and roughly chopped (about 1/3 cup)
25gm fresh ginger, peeled and sliced into thin coins
1/2cupfresh lemon juiceabout 3 medium lemons
1/2cupraw apple cider vinegarwith the mother if you can find it
1cupraw honeyor more to taste
Instructions
Combine the chopped garlic, sliced ginger, lemon juice, and apple cider vinegar in a small saucepan.
Bring to a gentle simmer over medium heat, then lower the heat and cook for 15 to 20 minutes, stirring occasionally, until the garlic softens and turns slightly translucent. Simmering mellows the raw bite of the garlic before it goes into the jar.
Remove the pan from the heat and let the mixture cool to room temperature, about 30 minutes. Cooling first protects the raw honey's natural enzymes, which break down in high heat.
Once fully cooled, stir in the honey until it dissolves.
Pour everything, garlic and ginger pieces included, into a clean glass jar with a tight-fitting lid.
Refrigerate and shake well before each use, since the garlic and ginger settle at the bottom.
