2 tablespoons unflavored gelatin 1 cup cold water 3/4 cup hot water 1/4 cup unsweetened cranberry juice or lemon water 1 to 2 teaspoons lemon juice optional tiny pinch salt optional
Add the gelatin to the cold water and let it bloom for 5 minutes.
Pour in the hot water and stir until the gelatin is fully dissolved.
Stir in the cranberry juice or lemon water. Add lemon juice if using.
Divide the mixture into 4 small ramekins or silicone cups.
Refrigerate for 2 to 3 hours, or until set.
Serve chilled.
Do not skip blooming the gelatin.
Use only a small amount of juice to keep the recipe light.
Store covered in the fridge for up to 4 days.
