This bariatric gelatin recipe for weight loss makes easy sugar-free gelatin cups with plain gelatin, water, and a little unsweetened juice. A light, low-calorie snack or dessert that is easy to meal prep.

Ingredients
  

  • 2 tablespoons unflavored gelatin
  • 1 cup cold water
  • 3/4 cup hot water
  • 1/4 cup unsweetened cranberry juice or lemon water
  • 1 to 2 teaspoons lemon juice optional
  • tiny pinch salt optional

Instructions
 

  • Add the gelatin to the cold water and let it bloom for 5 minutes.
  • Pour in the hot water and stir until the gelatin is fully dissolved.
  • Stir in the cranberry juice or lemon water. Add lemon juice if using.
  • Divide the mixture into 4 small ramekins or silicone cups.
  • Refrigerate for 2 to 3 hours, or until set.
  • Serve chilled.

Notes

Do not skip blooming the gelatin.
Use only a small amount of juice to keep the recipe light.
Store covered in the fridge for up to 4 days.
