- 2 tablespoons olive oil
- 1 cup mushrooms chopped
- 1/2 cup long-grain rice
- 1/2 cup short-grain rice
- 2 bay leaves
- 1/2 cup green beans chopped
- 1 bell pepper chopped (any color will do)
- 1 tablespoon Cajun spice
- 1 teaspoon paprika
- Salt to taste
- 2 cups vegetable or chicken broth
- 1 cup boiled kidney beans
- 1 tablespoon Worcestershire sauce
- Juice of 1 lime
- Butter for serving optional
Heat olive oil in a pan, sauté chopped mushrooms until golden, then set aside.
Rinse long-grain and short-grain rice in cold water.
In the same pan, add more olive oil and sauté bay leaves, chopped onions, green beans, and bell peppers for 2 minutes.
Stir in the rinsed rice, mixing well with the veggies.
Add Cajun spice, paprika, and salt; stir to coat the rice evenly.
Pour in 2 cups of vegetable or chicken broth.
Add boiled kidney beans and drizzle Worcestershire sauce over the mixture.
Cover the pan, reduce the heat, and cook until the rice absorbs the liquid (about 15-20 minutes).
Once cooked, squeeze in lime juice and stir in the sautéed mushrooms.
Serve hot, optionally topped with a dollop of butter.
