Ingredients
  

  • 2 tablespoons olive oil
  • 1 cup mushrooms chopped
  • 1/2 cup long-grain rice
  • 1/2 cup short-grain rice
  • 2 bay leaves
  • 1/2 cup green beans chopped
  • 1 bell pepper chopped (any color will do)
  • 1 tablespoon Cajun spice
  • 1 teaspoon paprika
  • Salt to taste
  • 2 cups vegetable or chicken broth
  • 1 cup boiled kidney beans
  • 1 tablespoon Worcestershire sauce
  • Juice of 1 lime
  • Butter for serving optional

Instructions
 

  • Heat olive oil in a pan, sauté chopped mushrooms until golden, then set aside.
  • Rinse long-grain and short-grain rice in cold water.
  • In the same pan, add more olive oil and sauté bay leaves, chopped onions, green beans, and bell peppers for 2 minutes.
  • Stir in the rinsed rice, mixing well with the veggies.
  • Add Cajun spice, paprika, and salt; stir to coat the rice evenly.
  • Pour in 2 cups of vegetable or chicken broth.
  • Add boiled kidney beans and drizzle Worcestershire sauce over the mixture.
  • Cover the pan, reduce the heat, and cook until the rice absorbs the liquid (about 15-20 minutes).
  • Once cooked, squeeze in lime juice and stir in the sautéed mushrooms.
  • Serve hot, optionally topped with a dollop of butter.
