Easy Irish Colcannon Recipe

This comforting Irish dish is a blend of creamy mashed potatoes, sautéed kale, and green onions. This Easy Irish Colcannon recipe is perfect for St. Patrick’s Day or any cozy family dinner.

2 lbs. potatoes Yukon Gold or Russet, peeled and cubed 1 tablespoon butter or vegan butter for a dairy-free option ½ cup milk or non-dairy alternative 1/2 cups kale chopped (or cabbage if preferred) 1/2 cup spinach 3 green onions scallions, sliced Salt to taste Black pepper 1 tbsp Butter for serving
Boil the Potatoes Place peeled, cubed potatoes in a large pot. Cover with cold water and add a pinch of salt.

Bring to a boil and cook for 15–20 minutes, or until the potatoes are fork-tender.
Mash the Potatoes Drain the boiled potatoes and return them to the pot.
Add butter and milk, then mash until smooth and creamy. Season with salt and pepper. Keep aside.

Sauté the Onion and Kale Heat a small amount of butter or oil in a skillet.

Add chopped green onions sauté for a minute

Add chopped kale, spinach and a pinch of salt. Sauté until wilted but still vibrant.

Combine Greens & Potatoes Gently fold tthe mashed potatoes into sautéed kale and sliced green onions.
Taste and adjust seasonings (add more butter, milk, salt, or pepper as desired).

Vegan/Dairy-Free: Use vegan butter and non-dairy milk such as oat or almond.
Storage: Keep leftovers in an airtight container for up to 3 days. Reheat gently with a splash of milk to maintain creaminess.
Variations:
Replace kale with cabbage, or use a blend of both.
Add leeks for a subtle onion flavor.
Stir in chili flakes or diced peppers for a spicy twist.
