In a bowl of the stand mixer, pour ½ cup milk, ¼ cup water, 2 teaspoon sugar, 1.25 teaspoon active dry yeast, 2 teaspoon olive oil, 2 cups all-purpose flour, and 1 teaspoon salt.
Attach the hook and begin kneading the dough till it is close to being smooth and elastic.
Place dry flour on any board or flat surface so that the dough doesn’t stick on it.
Place the dough on it. Now with the fingers press the dough inwardly and then fold it 2-3 times.
Place the dough inside a bowl and cover the dough with a cloth for 30 minutes or till it doubles in size.
Spread some dry flour on the flat surface. Cut it into 2 equal pieces.
With your fingers start spreading the dough in a circular shape. Or with a rolling pin give the dough a circular shape.
In the corners of the circle add cheese. Roll the sides of the circle towards the center so that it has a boat-like shape. Now, pinch the corners together. (as shown in the video)
Place the Khachapuri bread in a baking tray lined with parchment paper. Add more cheese in the center of the bread.
Preheat the oven to 450 degrees and place the Khachapuri bread in it. Bake for 15 minutes or till the crust becomes golden brown.
Take it out of the oven, with the back of a spoon, make a well in the center by pushing down the melting cheese.
Crack an egg and add it in the center of the bread. Also, stick a few pieces of unsalted butter in it.
Place it back in the oven for another 5-6 minutes. The egg should be white but a bit runny. At the time of serving mix the egg with the cheese and then serve. (tear off the bread pieces and use it or use a spoon)
