In a large bowl, mix together the diced tomatoes, cucumbers and parsley.
Squeeze the lime juice or vinegar over the vegetables and mix well. Add salt and pepper to taste.
Optional: Stir in the chopped mint and crumbled feta cheese.
Cover the bowl with plastic wrap and refrigerate for at least 30 minutes before serving.
Serve the salad chilled as a side dish or as a topping for grilled meats or fish.
You can also add some red radish, green onion or green pepper to make it more colorful and flavorful. Some variations may also include a little bit of olive oil to enhance the flavor.
