Ingredients
  

  • 1 kg Tomatoes plum or Roma tomatoes work best
  • 2 teaspoon Salt
  • 1 teaspoon Mixed herbs optional, such as oregano, basil, or thyme
  • 1/2 cup Olive oil for storing

Instructions
 

  • Preheat your oven to a low temperature, around 200°F (93°C).
  • Wash and dry your tomatoes, then slice them into uniform thickness, about ¼ inch thick.
  • Remove the seeds from the tomatoes and place the slices on a baking sheet lined with parchment paper.
  • Sprinkle the tomato slices with salt, pepper, and herbs of your choice.
  • Place the baking sheet in the oven and bake for several hours, checking occasionally, until the tomatoes are shriveled and dry to the touch.
  • Once cooled, transfer the sun-dried tomatoes to an airtight container or jar and cover them with olive oil to preserve their freshness.
