- 1 kg Tomatoes plum or Roma tomatoes work best
- 2 teaspoon Salt
- 1 teaspoon Mixed herbs optional, such as oregano, basil, or thyme
- 1/2 cup Olive oil for storing
Preheat your oven to a low temperature, around 200°F (93°C).
Wash and dry your tomatoes, then slice them into uniform thickness, about ¼ inch thick.
Remove the seeds from the tomatoes and place the slices on a baking sheet lined with parchment paper.
Sprinkle the tomato slices with salt, pepper, and herbs of your choice.
Place the baking sheet in the oven and bake for several hours, checking occasionally, until the tomatoes are shriveled and dry to the touch.
Once cooled, transfer the sun-dried tomatoes to an airtight container or jar and cover them with olive oil to preserve their freshness.
