Thai Vegetable Soup Recipe

Ingredients

  • ½ lemongrass stalks
  • 1 - 2 kaffir lime leaves
  • 1 - 2 chilies red
  • ½ onion sliced { optional }
  • 1 cloves garlic , finely chopped
  • 1 inch galangal piece
  • ½ cup Mushrooms fresh
  • ½ cup cabbage
  • ¼ cup carrots sliced thinly
  • ¼ cup Tomatoes chopped
  • 1 teaspoon brown sugar .
  • 2 tablespoon soy sauce .
  • 1 tablespoon lime juice . fresh-squeezed
  • 7 - 8 thai basil leaves
  • masala oats Saffola { optional }

Instructions

  • Heat 6 cups of water in a pan and add lemon grass, lime leaves, chili, garlic, and galangal and also add garlic and ginger too. Let it boil for 5 minutes.
  • Add sliced carrots, mushroom, broccoli and mushrooms. Let them simmer for 5-8 minutes, or until vegetables are soft.
  • Finally add the bok choy, thai basil and cherry tomatoes. Let it cook for a minute or two.
  • Reduce heat to low and add sugar, soy sauce, and lime juice. Finally if you like to add oats , add a small packet of masala oats.
  • Adjust seasoning to your preference, no need to add extra salt in this thai soup because masala oats and soy sauce both contain salt.
