Parmesan Roasted Cauliflower

Ingredients

  • 1 Head Cauliflower - cut into thick sections
  • 1 teaspoon Oregano Dried
  • ½ teaspoon sage
  • 3 - 4 T Olive Oil
  • ½ teaspoon sea salt
  • 1 teaspoon red chilli flakes
  • 2 tablespoon Parmesan grated

Instructions

  • Preheat oven to 425. Clean cauliflower and cut florets into big pieces.
  • In a large bowl, toss cauliflower florets with oregano and dried sage in olive oil.Season with salt and roasted red chilli flakes and gently toss again.
  • Spread cauliflower florets on a roasting pan and roast for 20 minutes in oven at about 250-275 C. Time taken for browning may vary according to climate and different brands of oven sometimes as a thumb rule I use a high temperature for roasting and browning.
  • Add parmesan cheese in last 5 minutes and serve warm or at room temperature.

Here are few tried and tested ways that work for me while roasting vegetables.

  • High heat is very important, Pre heat oven at high temperature to intensify the natural flavour of any vegetables as well as caramelization and browning that helps to make it even more delicious.
  • Vegetables should be cut in even size and if its smaller in size vegetables can be roasted whole so that texture and taste remains same through out.

Notes

Some fat is good, for the roasting and your health too {can’t get the attitude of people towards eliminating even healthy fats from their meals}. Oil helps vegetable to become brown, coat them with some oil and sprinkle some salt.
