Making Cherry Tomato Pasta Sauce
Infuse the oil: In a pan, heat 2 tablespoons of olive oil over medium heat. Add the chili flakes and cook for about 30 seconds. Keep adding splashes of water to prevent burning.
2 tbsp Olive oil
Add cherry tomatoes: Toss in the cherry tomatoes and cook for about 5 minutes until they start to burst, releasing their juices.
100 g Cherry tomatoes
Add Cream: Add the low-fat cream, salt, and black pepper. Let the sauce cook for about 2 minutes, thickening slightly.
1/4 cup Low-fat cream, 1 tsp Salt, 1/2 tsp pepper
Spice things up: Stir in the Calabrian chilies and Italian seasoning. This is where the magic happens!
1 tsp Italian seasoning, 1 tbsp red chili powder
Combine everything: Add the cooked pasta and a little bit of the pasta water to the sauce.
Garnish: Top with freshly shredded Parmesan, a sprinkle of Parmesan-pistachio powder and garnish with fresh basil leaves.
1 tbsp Parmesan cheese, 1 tbsp basil, 1 tbsp Rosemary
Rekha's Notes
- Roast Your Tomatoes: If you have extra time, roast your cherry tomatoes with olive oil and garlic to add a smoky flavor.
- Perfectly Cooked Pasta: Cook your pasta al dente, so it doesn’t get mushy when tossed with the sauce.
- Add Some Heat: If you love spicy food, add some extra crushed red pepper flakes or a dash of hot sauce to really amp up the heat.
- Balance the Flavors: If the sauce is too spicy, balance it with a little more cream or a touch of honey for sweetness.
