  • 4 hard-boiled eggs
  • 2 tablespoons mayonnaise
  • 2 tablespoons fresh parsley finely chopped
  • 1 tablespoon fresh mint finely chopped
  • Salt and pepper to taste

Instructions
 

Prepare Hard-Boiled Eggs:

  • Start by boiling the eggs until they are hard-boiled. Once done, peel them and set them aside to cool.

Make the Green Mixture:

  • In a bowl, combine the mayonnaise, fresh parsley, and fresh mint. Mix them together until you have a vibrant green mixture.

Slice and Dress:

  • Cut the hard-boiled eggs in half lengthwise. Remove the yolks and place them in the green mixture bowl. Mash the yolks into the green mixture, creating a creamy and herby filling. Season with salt and pepper to taste.

Fill and Serve:

  • Using a spoon or a piping bag, fill each egg white half with the green yolk mixture. Arrange them on a plate and garnish with a sprig of fresh mint or parsley.
