Ingredients
  

  • 2 slices sourdough bread
  • 1 tablespoon butter plus more for toasting
  • 1 tablespoon mint chutney
  • 1/2 cup aloo-gobhi sabzi or any leftover sabzi you have
  • 1 slice paneer
  • 1/4 cup stir-fried veggies like bell peppers, onions, or zucchini
  • 1 slice cheddar cheese

Instructions
 

  • Take a slice of sourdough bread and spread butter on one side.
  • On top of that, spread a layer of mint chutney.
  • Spread leftover aloo-gobhi sabzi evenly over the chutney-covered side.
  • Place a slice of paneer on top of the sabzi for a creamy, protein-rich layer.
  • Add some stir-fried veggies like bell peppers, onions, or zucchini on top of the paneer.
  • Place a slice of cheddar cheese on top of the veggies.
  • Cover the sandwich with a second slice of sourdough bread.
  • Melt butter in a pan over medium heat.
  • Toast the sandwich on both sides until the bread is golden brown and crispy, and the cheese is melted.
  • Slice the sandwich in half and enjoy the delicious layers!
