2 slices sourdough bread 1 tablespoon butter plus more for toasting 1 tablespoon mint chutney 1/2 cup aloo-gobhi sabzi or any leftover sabzi you have 1 slice paneer 1/4 cup stir-fried veggies like bell peppers, onions, or zucchini 1 slice cheddar cheese
Take a slice of sourdough bread and spread butter on one side.
On top of that, spread a layer of mint chutney.
Spread leftover aloo-gobhi sabzi evenly over the chutney-covered side.
Place a slice of paneer on top of the sabzi for a creamy, protein-rich layer.
Add some stir-fried veggies like bell peppers, onions, or zucchini on top of the paneer.
Place a slice of cheddar cheese on top of the veggies.
Cover the sandwich with a second slice of sourdough bread.
Melt butter in a pan over medium heat.
