1 pint cherry tomatoes halved 1 ball burrata cheese 1/4 cup fresh basil chopped 1/4 cup fresh mint chopped 1/4 cup olive oil 1/4 cup tomato pulp 1 tablespoon lemon juice Salt and pepper to taste 2 slices sourdough bread toasted Sea salt for finishing
Cut the cherry tomatoes in half and chop the basil and mint leaves.
In a bowl, make the sauce by combining olive oil, fresh tomato pulp, lemon juice, salt, and pepper.
Add the chopped tomatoes, basil, and mint to the sauce and mix well.
Serve the marinated tomatoes on a plate and then add the burrata cheese.
Cut open the burrata and top it off with some basil, mint, sea salt, and a drizzle of olive oil.
Slather the burrata and marinated tomatoes on toasted sourdough bread and enjoy!
